🍰 Crêpes Suzette

Ingredients
- Eggs 2 pcs.
- Milk 300 ml
- Wheat flour, Type 405 125 g
- Brown sugar 130 g
- Salt pinch
- Oranges 3 pcs.
- Butter 4 tbsp
- Cognac 75 ml
- Icing sugar 1 tbsp
Instructions
- 1. In a bowl, mix the eggs and milk well. Add the flour, 80 g of sugar, and a pinch of salt, and stir until a homogeneous batter forms.
- 2. Meanwhile, wash one orange thoroughly, grate the peel, and squeeze out the juice. Peel the remaining oranges with a sharp knife, making sure to remove the white pith as well. Then, cut out the fruit segments from the membranes with V-shaped cuts.
- 3. In a pot over medium heat, melt the butter, then add the remaining sugar and let it caramelize for about 2 minutes. Deglaze with the orange juice and 50 ml of cognac, and simmer until the caramel dissolves. Stir in the orange peel and segments, and keep warm.
- 4. Preheat a pan over medium heat, lightly grease with butter, and cook 8 thin crêpes from the batter one by one. Fold them into quarters and place them in the hot sauce.
- 5. As soon as all the crêpes are fried, pour the remaining cognac over them and ignite (flambé). Once the flame dies out, immediately sprinkle with icing sugar and serve. Enjoy your meal! Tip: Vanilla ice cream goes perfectly with this.
