  1. 1. Drain the canned peaches into a sieve. Catch the juice in a bowl.
  2. 2. Roughly chop the peach pieces.
  3. 3. Place the peach pieces into a tall container suitable for a hand blender.
  4. 4. Wash the mint thoroughly.
  5. 5. Pat the mint dry by gently shaking it.
  6. 6. Strip the mint leaves from the stems.
  7. 7. Finely chop the mint leaves.
  8. 8. Add the chopped mint and the yogurt to the container with the peaches.
  9. 9. Take 1 to 2 tablespoons of the collected peach juice.
  10. 10. Blend all ingredients together with the peach juice until smooth.
  11. 11. Place the lassi in the refrigerator to chill.
  12. 12. Wash the fresh peaches under running water.
  13. 13. Cut the fresh peaches in half through the pit.
  14. 14. Remove the pits from the peach halves.
  15. 15. Cut each peach half into 4 equal wedges.
  16. 16. Pour the chilled peach lassi into cups.
  17. 17. Dilute the lassi to taste with a little cold water or sparkling water.
  18. 18. Thread the peach wedges onto wooden skewers.
  19. 19. Decorate the lassi with the peach skewers.
