🍰 Crème Brûlée Cheesecake with Mango Passionfruit Sauce

Ingredients
- butter 123 g
- ladyfingers 150 g
- almonds, ground 50 g
- oranges 1 pc.
- cream cheese, plain 500 g
- whipping cream 400 g
- sugar 140 g
- cornstarch 1 tsp
- vanilla extract 2 tsp
- eggs 6 pcs.
- mango 250 g
- passion fruit 250 g
- lemons 1 pc.
- sugar for jam 85 g
- brown sugar 80 g
Instructions
- 1. Line a cake ring with baking paper and place it on a perforated baking sheet.
- 2. Melt the butter in a pot.
- 3. Crush the biscuits finely.
- 4. Mix the melted butter with the biscuit crumbs, almonds, and orange zest.
- 5. Fill the mixture into the cake ring.
- 6. Press the biscuit mixture evenly at the bottom, preferably using a burger press.
- 7. Preheat the oven to 160°C top/bottom heat.
- 8. Bake the base for about 15 minutes in the preheated oven.
- 9. Let the base cool down afterwards.
- 10. Beat the cream cheese with a hand mixer at low speed until creamy, without incorporating air.
- 11. Add the cream and stir it in.
- 12. Add the sugar and stir it in.
- 13. Add the starch and stir it in.
- 14. Add 1 tsp vanilla extract and stir it in.
- 15. Add 4 eggs and stir them in.
- 16. Add 2 egg yolks and stir them in.
- 17. Pour the liquid cream into the cake ring.
- 18. Bake the cheesecake at 160°C top/bottom heat for another 15 minutes.
- 19. Reduce the oven temperature to 130°C top/bottom heat.
- 20. Bake the cake for another 45 to 50 minutes.
- 21. Let the cake cool down in the oven.
- 22. Place the cake in the refrigerator.
- 23. Cut out the fruit flesh from the mango and passion fruit.
- 24. Weigh out 500 g of fruit flesh.
- 25. Puree the mango.
- 26. Mix all ingredients with the lemon juice, 1 tsp vanilla extract, and jam sugar in a pot.
- 27. Add a little water if necessary.
- 28. Bring the mixture to a boil.
- 29. Let the mixture simmer for 4 minutes.
- 30. Let the sauce cool down.
- 31. Carefully remove the cheesecake from the baking form.
- 32. Sprinkle the cake evenly with sugar.
- 33. Brown the cake in the oven under the grill on the highest rack until the sugar caramelizes.
- 34. Alternatively, brown the cake with a gas torch until the sugar caramelizes.
- 35. Serve the cake fresh with the mango passion fruit sauce.
