  1. 1. Line a cake ring with baking paper and place it on a perforated baking sheet.
  2. 2. Melt the butter in a pot.
  3. 3. Crush the biscuits finely.
  4. 4. Mix the melted butter with the biscuit crumbs, almonds, and orange zest.
  5. 5. Fill the mixture into the cake ring.
  6. 6. Press the biscuit mixture evenly at the bottom, preferably using a burger press.
  7. 7. Preheat the oven to 160°C top/bottom heat.
  8. 8. Bake the base for about 15 minutes in the preheated oven.
  9. 9. Let the base cool down afterwards.
  10. 10. Beat the cream cheese with a hand mixer at low speed until creamy, without incorporating air.
  11. 11. Add the cream and stir it in.
  12. 12. Add the sugar and stir it in.
  13. 13. Add the starch and stir it in.
  14. 14. Add 1 tsp vanilla extract and stir it in.
  15. 15. Add 4 eggs and stir them in.
  16. 16. Add 2 egg yolks and stir them in.
  17. 17. Pour the liquid cream into the cake ring.
  18. 18. Bake the cheesecake at 160°C top/bottom heat for another 15 minutes.
  19. 19. Reduce the oven temperature to 130°C top/bottom heat.
  20. 20. Bake the cake for another 45 to 50 minutes.
  21. 21. Let the cake cool down in the oven.
  22. 22. Place the cake in the refrigerator.
  23. 23. Cut out the fruit flesh from the mango and passion fruit.
  24. 24. Weigh out 500 g of fruit flesh.
  25. 25. Puree the mango.
  26. 26. Mix all ingredients with the lemon juice, 1 tsp vanilla extract, and jam sugar in a pot.
  27. 27. Add a little water if necessary.
  28. 28. Bring the mixture to a boil.
  29. 29. Let the mixture simmer for 4 minutes.
  30. 30. Let the sauce cool down.
  31. 31. Carefully remove the cheesecake from the baking form.
  32. 32. Sprinkle the cake evenly with sugar.
  33. 33. Brown the cake in the oven under the grill on the highest rack until the sugar caramelizes.
  34. 34. Alternatively, brown the cake with a gas torch until the sugar caramelizes.
  35. 35. Serve the cake fresh with the mango passion fruit sauce.
