🍰 Cranberry Swirls

Ingredients
- butter 125 g
- powdered sugar 100 g
- eggs 2 pcs.
- wheat flour, type 405 250 g
- salt pinch
- baking powder 1 tsp
- cranberries, dried 200 g
- orange juice 50 ml
- white rum 30 ml
- pistachios 4 tbsp
Instructions
- 1. Put the soft butter, powdered sugar, and one egg into a bowl.
- 2. Whisk the ingredients until fluffy using a hand mixer and whisk.
- 3. Add the flour, salt, and baking powder.
- 4. Knead everything into a smooth dough.
- 5. Place the dough in the refrigerator for about 1 hour.
- 6. Put the cranberries into a bowl.
- 7. Cover them with orange juice and rum.
- 8. Let the cranberries soak for about 1 hour.
- 9. Separate the remaining egg.
- 10. Save the egg yolk for another use.
- 11. Chop the pistachios coarsely.
- 12. Place the soaked cranberries along with the liquid into a tall container.
- 13. Blend the cranberries until smooth.
- 14. Add the chopped pistachios and the egg white.
- 15. Mix the mixture well.
- 16. Preheat the oven to 175 °C with top and bottom heat.
- 17. Sprinkle some flour on a work surface.
- 18. Roll out the dough on the floured surface.
- 19. Spread the cranberry mixture evenly over the dough.
- 20. Leave about 3 cm of dough free on one long side.
- 21. Roll the dough tightly from the other side.
- 22. Press the dough edge firmly.
- 23. Cut the roll into slices about 1 cm thick.
- 24. Place the swirls with the cut side up on a baking sheet lined with baking paper.
- 25. Bake the swirls in the oven for about 20 minutes.
- 26. Take them out when they are lightly golden brown.
- 27. Let the swirls cool on a cake rack.
