Ingredients
- Vegetable broth 300 ml
- couscous 200 g
- Cherry tomatoes 250 g
- Salad cucumbers 1 pc.
- feta 150 g
- Lemons 1 pc.
- Olive oil 2 tbsp
- Salt pinch
- Pepper, black ground pinch
Instructions
- 1. If necessary, prepare the broth, bring it to a boil, and pour the hot vegetable broth over the couscous in a bowl. Cover with plastic wrap and let it soak for about 10 minutes.
- 2. Wash the tomatoes thoroughly and cut them into quarters. Wash the cucumber and dice it. Crumble the feta with your hands. Wash the lemon, cut it in half, and squeeze out the juice.
- 3. Layer the tomatoes, cucumber, and feta alternately in a glass with the couscous. In a bowl, mix olive oil, 1 tablespoon of lemon juice, salt, and pepper, adjust to taste, and serve with the couscous salad with feta. Enjoy!
