  1. 1. If necessary, prepare vegetable broth, heat it, and pour it over the couscous in a bowl. Cover and let it swell for about 10 minutes.
  2. 2. Peel and finely chop the garlic. Wash the lettuce, trim the ends, and cut it lengthwise into quarters while keeping it attached at the stem. Wash the orange, zest about 1 teaspoon, halve it, and squeeze out the juice.
  3. 3. Heat 1 tablespoon of oil in a pan over medium heat and sauté the garlic for about 1 minute. In a bowl, combine the garlic with yogurt, orange zest, 1 teaspoon of orange juice, salt, pepper, and sugar, and adjust the seasoning. Do not clean the pan.
  4. 4. Reheat the pan over medium heat with 2 tablespoons of oil and sauté the lettuce for about 3 minutes. Deglaze with 4 tablespoons of orange juice, season with salt and pepper, remove the pan from the heat, and cover to keep warm.
  5. 5. Fluff the couscous with a fork and season with olive oil, Ras el Hanout, salt, and pepper. Serve on plates topped with the grilled romaine and garlic cream. Enjoy your meal!
