🍽️ Couscous with Grilled Romaine and Garlic Cream

Ingredients
- Vegetable broth 300 ml
- couscous 200 g
- Garlic cloves 2 pcs.
- Mini Romaine 4 pcs.
- Oranges 1 pc.
- Oil 3 tbsp
- Sour cream yogurt Greek style 150 g
- Salt pinch
- Pepper, black ground pinch
- Sugar pinch
- Olive oil 2 tbsp
- Raz el Hanout spice pinch
Instructions
- 1. If necessary, prepare vegetable broth, heat it, and pour it over the couscous in a bowl. Cover and let it swell for about 10 minutes.
- 2. Peel and finely chop the garlic. Wash the lettuce, trim the ends, and cut it lengthwise into quarters while keeping it attached at the stem. Wash the orange, zest about 1 teaspoon, halve it, and squeeze out the juice.
- 3. Heat 1 tablespoon of oil in a pan over medium heat and sauté the garlic for about 1 minute. In a bowl, combine the garlic with yogurt, orange zest, 1 teaspoon of orange juice, salt, pepper, and sugar, and adjust the seasoning. Do not clean the pan.
- 4. Reheat the pan over medium heat with 2 tablespoons of oil and sauté the lettuce for about 3 minutes. Deglaze with 4 tablespoons of orange juice, season with salt and pepper, remove the pan from the heat, and cover to keep warm.
- 5. Fluff the couscous with a fork and season with olive oil, Ras el Hanout, salt, and pepper. Serve on plates topped with the grilled romaine and garlic cream. Enjoy your meal!
