🍰 Cookies with Coconut Filling

Ingredients
- condensed milk 150 ml
- sugar 60 g
- vanilla extract 1 tsp
- desiccated coconut 200 g
- wheat flour, Type 405 250 g
- cocoa powder 50 g
- butter 200 g
- salt pinch
- eggs 1 pc.
- couverture, dark 150 g
Instructions
- 1. Put the condensed milk, 60 grams of sugar, and vanilla extract into a small saucepan.
- 2. Bring the mixture to a boil and cook it for about 1 minute until it becomes thick.
- 3. Stir 150 grams of shredded coconut into the hot mixture.
- 4. Let the coconut filling cool down completely.
- 5. Mix the flour with the cocoa, cold butter, 100 grams of sugar, a pinch of salt, and the egg.
- 6. Knead the ingredients into a smooth dough.
- 7. Flatten the dough onto a plate.
- 8. Cover the dough and refrigerate it for 1 hour.
- 9. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 10. Line baking trays with non-stick baking paper.
- 11. Shape small balls from the cooled coconut mixture with a diameter of about 1.5 centimeters.
- 12. Portion the chilled cookie dough into balls about 3 centimeters in size.
- 13. Gently open a dough ball in your palm.
- 14. Use a little flour on your hands so the dough does not stick.
- 15. Place a coconut ball into the opened dough ball.
- 16. Carefully close the dough around the filling.
- 17. Reshape the filled ball to be smooth.
- 18. Place the cookies on the prepared baking trays.
- 19. Gently flatten the cookies.
- 20. Bake the trays one after the other in the oven.
- 21. Chop the chocolate coating into small pieces.
- 22. Melt 100 grams of the chocolate coating over a warm, but not boiling, water bath.
- 23. Remove the bowl from the water bath and stir in the remaining 50 grams of chocolate coating.
- 24. Stir until all pieces are melted.
- 25. Dip the cooled cookies into the liquid chocolate coating.
- 26. Gently scrape off excess coating from the bottom.
- 27. Sprinkle the cookies with 50 grams of shredded coconut.
- 28. Place the decorated cookies on baking paper until the coating is set.
- 29. Store the cookies in an airtight container.
