🍽️ Spanish Vegetable Pizza (Coca de Verduras)

Ingredients
- flour, Type 405 250 g
- salt 1 tsp
- dried yeast 1 packet
- water 200 ml
- zucchini 1 pc
- vine tomatoes 3 pcs
- onions 1 pc
- bell pepper, red 1 pc
- olive oil 7 tbsp
- garlic cloves 3 pcs
- pepper, black ground pinch
Instructions
- 1. Mix wheat flour, salt, and dried yeast in a bowl.
- 2. Add warm water and knead the mixture well with your hands.
- 3. Cover the bowl with a kitchen towel.
- 4. Let the dough rise in a warm place for about 2 hours.
- 5. Check if the volume of the dough has doubled.
- 6. Knead the dough briefly again.
- 7. Spread the dough out on a baking sheet lined with baking paper.
- 8. Wash the zucchini and cut off the ends.
- 9. Wash the vine tomatoes.
- 10. Peel the vegetable onion.
- 11. Wash the bell pepper, halve it, and remove the stem and seeds.
- 12. Cut the prepared vegetables into cubes measuring 1 to 2 centimeters.
- 13. Heat 3 tablespoons of olive oil in a pan over medium heat.
- 14. Fry the cut vegetables in the pan for about 4 to 5 minutes.
- 15. Season the vegetables with salt and pepper.
- 16. Peel the garlic cloves and chop them finely.
- 17. Fry the garlic with the vegetables for about 1 minute.
- 18. Preheat the oven to 200 degrees Celsius (convection mode).
- 19. Drizzle 4 tablespoons of olive oil over the dough base.
- 20. Top the dough with the fried vegetables.
- 21. Bake the pizza in the oven for about 20 to 25 minutes.
