🍽️ Club Sandwich with Oven Fries and Thyme Ketchup

Ingredients
- potatoes, mainly waxy 500 g
- vine tomatoes 4 pcs.
- thyme, fresh 5 g
- shallots 2 pcs.
- turkey breast fillet 600 g
- oil 3 tbsp
- salt pinch
- pepper, black ground pinch
- sugar 1 tbsp
- tomato paste 70 g
- honey 1 tbsp
- balsamic vinegar, light 2 tbsp
- toast bread 12 slices
- eggs 4 pcs.
- mayonnaise 4 tsp
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan setting.
- 2. Wash, peel, and cut the potatoes into sticks about 1.5 centimeters thick.
- 3. Wash the tomatoes and remove the stems.
- 4. Slice half of the tomatoes and dice the other half.
- 5. Wash the thyme, shake off excess water, and pluck the leaves from the stems.
- 6. Finely chop the thyme leaves.
- 7. Peel the shallots and slice them into thin rings.
- 8. Wash the turkey breast and pat it dry with a paper towel.
- 9. Cut the turkey breast into four equal pieces.
- 10. Place the potato sticks in a bowl.
- 11. Add one tablespoon of oil and mix everything well.
- 12. Season the potatoes with salt and pepper.
- 13. Spread the potatoes on a baking sheet.
- 14. Bake the fries in the oven for about 25 to 30 minutes.
- 15. Turn the fries halfway through the baking time.
- 16. Heat a pot over medium heat.
- 17. Let the sugar caramelize in the pot.
- 18. Add the diced tomatoes and the chopped thyme.
- 19. Cook the mixture for about 2 to 3 minutes.
- 20. Crush the tomatoes with a fork.
- 21. Stir in the tomato paste.
- 22. Mix everything well.
- 23. Season the ketchup with salt and pepper.
- 24. Refine the ketchup with honey and balsamic vinegar.
- 25. Heat one tablespoon of oil in a pan over medium heat.
- 26. Sauté the shallot rings for about 3 minutes until golden brown.
- 27. Remove the shallots from the pan and set them aside.
- 28. Clean the pan with a paper towel.
- 29. Toast the bread slices.
- 30. Heat the remaining oil in the pan over high heat.
- 31. Sear the turkey pieces for about 1 to 2 minutes on each side.
- 32. Season the meat with salt and pepper.
- 33. Remove the meat from the pan.
- 34. Place the meat on a plate.
- 35. Cover the meat with aluminum foil.
- 36. Let the meat rest for about 5 minutes.
- 37. Fry the eggs in the pan drippings for about 3 minutes.
- 38. Fry the eggs until sunny-side up.
- 39. Season the fried eggs with salt.
- 40. Spread a thin layer of mayonnaise on two slices of toast.
- 41. Place the sliced meat on the toast slices.
- 42. Place the shallot rings on the meat.
- 43. Drizzle one tablespoon of ketchup over each sandwich half.
- 44. Top each half with another slice of toast.
- 45. Spread ketchup on the top toast slice.
- 46. Place a fried egg on the sandwich half.
- 47. Place the tomato slices on the egg.
- 48. Finish the sandwich with another slice of toast.
- 49. Remove the fries from the oven.
- 50. Serve the fries with the club sandwiches and the remaining ketchup.
