  1. 1. Rinse the clementines under running water.
  2. 2. Grate about one teaspoon of fine zest from the clementines.
  3. 3. Squeeze all the clementines and the lemon.
  4. 4. Measure out 400 milliliters of juice.
  5. 5. Add water if necessary to reach the amount.
  6. 6. Put the grated zest and the sugar into a pot.
  7. 7. Mix the ingredients in the pot well.
  8. 8. Peel the ginger.
  9. 9. Cut the ginger into small pieces.
  10. 10. Add the ginger pieces to the sugar-zest mixture.
  11. 11. Add the juice mixture to the pot.
  12. 12. Heat the mixture slowly while stirring constantly.
  13. 13. Let the mixture boil vigorously.
  14. 14. Boil the mixture for two minutes.
  15. 15. Remove the ginger pieces from the syrup.
  16. 16. Rinse clean bottles with hot water.
  17. 17. Fill the hot syrup immediately into the prepared bottles.
  18. 18. Close the bottles well.
  19. 19. Let the syrup cool down.
  20. 20. Put two tablespoons of syrup into each glass.
  21. 21. Fill the glasses with sparkling wine.
