🍳 Cilbir: Turkish Poached Eggs with Yogurt and Spiced Butter

Ingredients
- parsley, fresh 20 g
- dill, fresh 20 g
- garlic cloves 1 pc.
- Greek-style cream yogurt 500 g
- salt pinch
- sugar pinch
- butter 4 tbsp
- rose pepper 1 tsp
- chili, ground 0.25 tsp
- vinegar 1 tbsp
- eggs 8 pc.
Instructions
- 1. Rinse the herbs under running water and pat them dry with a kitchen towel.
- 2. Remove the thick stems from the herbs and chop the green parts finely.
- 3. Peel the garlic cloves and dice them into very small cubes.
- 4. Place the Greek yogurt into a bowl.
- 5. Add two-thirds of the chopped herbs and the diced garlic to the yogurt.
- 6. Stir in a pinch of salt and a pinch of sugar into the yogurt mixture.
- 7. Mix everything well until evenly combined, then taste and adjust if necessary.
- 8. Heat the butter in a small pan over high heat until it has melted.
- 9. Add the paprika powder and chili flakes to the hot butter.
- 10. Let the spices foam in the butter for about one minute.
- 11. Remove the pan from the heat and set the spiced butter aside.
- 12. Fill a pot with about two liters of water and add one tablespoon of salt.
- 13. Bring the salted water to a boil.
- 14. Pour a splash of vinegar into the bubbling water.
- 15. Reduce the heat so that the water is only simmering gently and not boiling vigorously.
- 16. Crack an egg carefully into a small cup, ensuring the yolk remains intact.
- 17. Create a gentle swirling motion in the water using a whisk.
- 18. Carefully pour the egg from the cup into the center of the swirl.
- 19. Repeat this process with the remaining eggs.
- 20. Let the eggs cook for about four to five minutes over low heat.
- 21. Carefully remove the poached eggs from the water using a slotted spoon.
- 22. Distribute the garlic-herb yogurt evenly onto the plates.
- 23. Place two poached eggs on top of the yogurt on each plate.
- 24. Drizzle a spoonful of the warm spiced butter over each egg.
- 25. Sprinkle the dish with the remaining fresh herbs.
- 26. Serve Cilbir immediately and enjoy it with fresh bread as desired.
