  1. 1. Rinse the herbs under running water and pat them dry with a kitchen towel.
  2. 2. Remove the thick stems from the herbs and chop the green parts finely.
  3. 3. Peel the garlic cloves and dice them into very small cubes.
  4. 4. Place the Greek yogurt into a bowl.
  5. 5. Add two-thirds of the chopped herbs and the diced garlic to the yogurt.
  6. 6. Stir in a pinch of salt and a pinch of sugar into the yogurt mixture.
  7. 7. Mix everything well until evenly combined, then taste and adjust if necessary.
  8. 8. Heat the butter in a small pan over high heat until it has melted.
  9. 9. Add the paprika powder and chili flakes to the hot butter.
  10. 10. Let the spices foam in the butter for about one minute.
  11. 11. Remove the pan from the heat and set the spiced butter aside.
  12. 12. Fill a pot with about two liters of water and add one tablespoon of salt.
  13. 13. Bring the salted water to a boil.
  14. 14. Pour a splash of vinegar into the bubbling water.
  15. 15. Reduce the heat so that the water is only simmering gently and not boiling vigorously.
  16. 16. Crack an egg carefully into a small cup, ensuring the yolk remains intact.
  17. 17. Create a gentle swirling motion in the water using a whisk.
  18. 18. Carefully pour the egg from the cup into the center of the swirl.
  19. 19. Repeat this process with the remaining eggs.
  20. 20. Let the eggs cook for about four to five minutes over low heat.
  21. 21. Carefully remove the poached eggs from the water using a slotted spoon.
  22. 22. Distribute the garlic-herb yogurt evenly onto the plates.
  23. 23. Place two poached eggs on top of the yogurt on each plate.
  24. 24. Drizzle a spoonful of the warm spiced butter over each egg.
  25. 25. Sprinkle the dish with the remaining fresh herbs.
  26. 26. Serve Cilbir immediately and enjoy it with fresh bread as desired.
