  1. 1. Put water, butter, and a pinch of salt into a pot.
  2. 2. Heat the mixture until it boils and the butter is completely melted.
  3. 3. Mix flour and 50 grams of sugar in a separate bowl.
  4. 4. Remove the pot from the heat.
  5. 5. Stir the flour mixture into the hot water immediately until a firm dough forms.
  6. 6. Keep stirring until the dough pulls away from the bottom of the pot and forms a white layer.
  7. 7. Transfer the dough into a clean bowl.
  8. 8. Let the dough cool down for 10 minutes.
  9. 9. Add the eggs one by one into the cooled dough.
  10. 10. Thoroughly mix in each egg before adding the next one.
  11. 11. Keep stirring until the dough is smooth and shiny.
  12. 12. Fill the dough into a piping bag fitted with a star nozzle.
  13. 13. Heat oil in a large pot on the highest heat setting.
  14. 14. Pipe dough strips of about 10 centimeters directly into the hot oil.
  15. 15. Fry the churros for about 2 minutes until they are golden brown.
  16. 16. Remove the churros from the oil and let them drain on kitchen paper.
  17. 17. Mix the remaining sugar with cinnamon in a small bowl.
  18. 18. Pour the cinnamon-sugar mixture onto a plate.
  19. 19. Roll the warm churros in the cinnamon-sugar mixture.
  20. 20. Serve the churros immediately.
