Ingredients
- Raisins 100 g
- Apple juice 50 ml
- Marzipan base 200 g
- Wheat flour, Type 405 300 g
- Baking powder 3 tsp
- Sugar 200 g
- Almonds, ground 200 g
- Salt pinch
- Cinnamon 1 tsp
- butter 260 g
- Eggs 4 pcs
- Quark 40% fat in dry matter 250 g
- Milk 200 g
- Vanilla extract 1 tsp
- Orange paste 1 tsp
- Lemon paste 1 tsp
- Powdered sugar 100 g
Instructions
- 1. Place the raisins and apple juice in a bowl so that the raisins can absorb the liquid.
- 2. Put the marzipan paste in the freezer for a short time to firm it up.
- 3. Cut the frozen marzipan paste into coarse pieces.
- 4. Place a baking ring on a tray lined with baking paper.
- 5. Preheat the oven to 170 degrees Celsius with top and bottom heat.
- 6. Mix the flour, baking powder, sugar, ground almonds, a pinch of salt, and cinnamon in a large bowl with a lid.
- 7. Add the liquid ingredients: the 180 grams of soft butter, the eggs, the quark, the milk, the vanilla extract, and the orange and lemon pastes.
- 8. Close the lid of the bowl.
- 9. Shake the bowl vigorously until the dough is well combined.
- 10. Gently fold the moist raisins and the marzipan pieces into the dough.
- 11. Bake the stollen in the preheated oven until it is golden brown.
- 12. Melt 80 grams of butter in a pot or in the microwave.
- 13. Brush the still hot cake immediately with the melted butter.
- 14. Sprinkle powdered sugar over the cake.
- 15. Let the cake cool down completely.
- 16. Remove the baking ring and the baking paper.
- 17. Cut the cooled stollen into small pieces for serving.
