  1. 1. Mix the cherry juice with the cornstarch until no lumps remain.
  2. 2. Wash the orange and peel off 2 to 3 thin strips of zest, avoiding the white pith.
  3. 3. Place the orange zest strips into a pot.
  4. 4. Remove the remaining peel from the orange and separate the flesh segments into fillets.
  5. 5. Add the orange segments and the squeezed orange juice to the pot.
  6. 6. Add the cinnamon stick to the pot and bring the mixture to a boil.
  7. 7. Add the cherries once the mixture has thickened.
  8. 8. Allow the fruit filling to cool down.
  9. 9. Mix the mascarpone with the powdered sugar and vanilla extract until creamy.
  10. 10. Stir the quark into the mascarpone mixture.
  11. 11. Add the cream and whip the mixture until stiff.
  12. 12. Remove the cinnamon stick and orange zest from the cooled fruit filling.
  13. 13. Break the biscuits into coarse pieces.
  14. 14. Distribute the biscuit pieces into soufflé molds or small bowls.
  15. 15. Soak the biscuits with black tea.
  16. 16. Add a spoonful of cream onto the biscuits and spread it evenly.
  17. 17. Add a spoonful of fruit filling onto the cream.
  18. 18. Distribute more biscuit pieces over the fruit filling.
  19. 19. Soak the new biscuits again with a little black tea.
  20. 20. Add the remaining cream on top and smooth it out.
  21. 21. Place the desserts in the refrigerator for 1 to 2 hours.
  22. 22. Cut stars or other shapes out of paper.
  23. 23. Place the paper stencils onto the cold cream.
  24. 24. Mix cinnamon and cocoa powder in a bowl.
  25. 25. Place the dry mixture into a sieve.
  26. 26. Tap the sieve over the desserts to distribute the powder mixture evenly.
  27. 27. Carefully remove the paper stencils from the surface.
