🍰 Classic Christmas Pudding

Ingredients
- Raisins 150 g
- white rum 2 tbsp
- dried plums 50 g
- soft apricots, dried and pitted 100 g
- hazelnut kernels, whole 50 g
- almonds, whole 50 g
- organic lemons 1 pcs
- apples, red 1 pcs
- butter 50 g
- breadcrumbs 50 g
- wheat flour, Type 405 75 g
- honey 2 tbsp
- eggs 2 pcs
- salt pinch
- cinnamon 1 tsp
- ground nutmeg 0.25 tsp
- allspice 0.25 tsp
- ginger powder 0.5 tsp
- oil for greasing 1 tsp
Instructions
- 1. Preheat the oven to 150 degrees Celsius with fan setting.
- 2. Place the raisins in a bowl.
- 3. Pour the rum over the raisins.
- 4. Add 150 milliliters of hot water.
- 5. Let the mixture steep for about 5 minutes.
- 6. Roughly chop the plums, apricots, and nuts.
- 7. Cut the lemon in half.
- 8. Squeeze the juice from the lemon.
- 9. Peel the apple.
- 10. Cut the apple into quarters.
- 11. Remove the core from the apple quarters.
- 12. Grate the apple finely.
- 13. Drain the raisins using a sieve.
- 14. Combine the drained raisins, chopped dried fruits, nuts, and grated apple in a large bowl.
- 15. Mix the ingredients with 2 tablespoons of lemon juice.
- 16. Add the soft butter.
- 17. Add the breadcrumbs.
- 18. Add the flour.
- 19. Add the honey.
- 20. Add the eggs.
- 21. Add the spices.
- 22. Mix everything into a dough using a hand mixer with dough hooks.
- 23. Grease a deep bowl or pudding mold.
- 24. Fill the dough into the prepared mold.
- 25. Smooth the surface of the dough.
- 26. Place the pudding mold into a larger baking dish.
- 27. Fill the baking dish with hot water.
- 28. Ensure the water level is about 2 centimeters below the rim of the pudding mold.
- 29. Cover the baking dish with aluminum foil.
- 30. Carefully place the baking dish on a rack in the oven.
- 31. Cook the pudding for about 3 hours.
- 32. Refill with water if necessary.
- 33. Remove the pudding mold from the oven.
- 34. Place a serving plate on top of the mold.
- 35. Invert the pudding onto the plate.
- 36. Cut the pudding into portions.
- 37. Serve the pudding.
