  1. 1. Cut the onion in half and remove the skin.
  2. 2. Cut the onion halves into thick wedges.
  3. 3. Cut the chorizo sausage into slightly diagonal pieces.
  4. 4. Cut the cooking peppers into pieces.
  5. 5. Thread the onion, chorizo, and peppers onto the skewers in an alternating pattern.
  6. 6. Peel the garlic and chop it roughly.
  7. 7. Cut the lime in half and squeeze out the juice.
  8. 8. Put the milk, one tablespoon of lime juice, and the chopped garlic into a tall container.
  9. 9. Blend the mixture with a hand blender.
  10. 10. Pour the oil in a very thin stream while mixing continuously.
  11. 11. Continue mixing until the aioli is creamy.
  12. 12. Season the aioli with salt and pepper to taste.
  13. 13. Preheat the grill.
  14. 14. Place the chorizo skewers on the grill.
  15. 15. Grill the skewers for about 8 minutes.
