🍽️ Grilled Chorizo Skewers with Homemade Aioli

Ingredients
- onions 1 pc.
- chorizo 500 g
- roasting peppers, green, for grilling and baking 250 g
- garlic cloves 3 pc.
- organic limes 1 pc.
- milk 100 ml
- oil 200 ml
- sea salt pinch
Instructions
- 1. Cut the onion in half and remove the skin.
- 2. Cut the onion halves into thick wedges.
- 3. Cut the chorizo sausage into slightly diagonal pieces.
- 4. Cut the cooking peppers into pieces.
- 5. Thread the onion, chorizo, and peppers onto the skewers in an alternating pattern.
- 6. Peel the garlic and chop it roughly.
- 7. Cut the lime in half and squeeze out the juice.
- 8. Put the milk, one tablespoon of lime juice, and the chopped garlic into a tall container.
- 9. Blend the mixture with a hand blender.
- 10. Pour the oil in a very thin stream while mixing continuously.
- 11. Continue mixing until the aioli is creamy.
- 12. Season the aioli with salt and pepper to taste.
- 13. Preheat the grill.
- 14. Place the chorizo skewers on the grill.
- 15. Grill the skewers for about 8 minutes.
- 16. Season the skewers with sea salt.
- 17. Spread the aioli onto plates.
- 18. Serve the skewers on top of the aioli.
