🍰 Chocolate Banana Cheesecake

Ingredients
- eggs 3 pcs
- butter 80 g
- powdered sugar 220 g
- salt pinch
- wheat flour, Type 405 150 g
- cocoa powder 1 tbsp
- cream cheese, plain 300 g
- mascarpone 300 g
- vanilla sugar 20 g
- bananas 3 pcs
- chocolate, dark 125 g
Instructions
- 1. Separate one egg. Use the egg white for another purpose.
- 2. Place the egg yolk in a bowl.
- 3. Add 80 g of butter.
- 4. Add 60 g of powdered sugar.
- 5. Add a pinch of salt to the bowl.
- 6. Add the flour to the bowl.
- 7. Add the cocoa powder to the bowl.
- 8. Mix everything well with a hand mixer until the dough is well combined.
- 9. Line a springform pan with baking paper.
- 10. Place the dough into the prepared pan.
- 11. Place the dough in the refrigerator for a while.
- 12. Preheat the oven to 200 °C.
- 13. Line the springform pan with baking paper.
- 14. Place dried beans on the baking paper.
- 15. Bake the dough base for about 10 minutes.
- 16. Remove the baking paper from the oven.
- 17. Remove the dried beans.
- 18. Bake the dough base for another 3 minutes.
- 19. Place cream cheese in a clean bowl.
- 20. Add mascarpone to the bowl.
- 21. Whisk the remaining eggs.
- 22. Add the whisked eggs to the bowl.
- 23. Add the remaining powdered sugar to the bowl.
- 24. Add the vanilla sugar to the bowl.
- 25. Whisk the cream well until smooth.
- 26. Peel the bananas.
- 27. Slice the bananas.
- 28. Gently fold the banana slices into the cream.
- 29. Spread the cream evenly over the dough base.
- 30. Bake the cake for approx. 35 minutes.
- 31. Let the cake cool down.
- 32. Place approx. 500 ml of water in a pot.
- 33. Bring the water to a boil.
- 34. Chop the chocolate roughly.
- 35. Place the chocolate in a small metal bowl.
- 36. Place the metal bowl over the hot water (bain-marie).
- 37. Let the chocolate melt.
- 38. Pour the melted chocolate over the cooled cake.
- 39. Spread the chocolate evenly.
- 40. Let the chocolate set.
- 41. Cut the cake into pieces.
- 42. Serve the cake.
