🍽️ Fresh Chimichurri Sauce

Ingredients
- garlic cloves 2 pcs.
- onions, red 0.5 pcs.
- organic limes 1 pcs.
- chili pepper mix 0.5 pcs.
- parsley, fresh 40 g
- thyme, fresh 5 g
- oregano, dried 3 tsp
- sea salt pinch
- olive oil 100 ml
- vinegar 2 tbsp
- pepper, black ground pinch
Instructions
- 1. Peel the garlic cloves and chop them very finely.
- 2. Halve the onion, remove the skin, and chop it finely as well.
- 3. Rinse the lime under hot water.
- 4. Grate about one teaspoon of the green zest finely.
- 5. Halve the lime and squeeze out the juice.
- 6. Wash the chili pepper and chop it finely, including the seeds.
- 7. Wash the herbs and shake them dry.
- 8. Remove the thick stems from the herbs.
- 9. Chop the herbs coarsely.
- 10. Place the garlic, onion, lime zest, one tablespoon of lime juice, chili pepper, oregano, and salt into a mortar.
- 11. Crush these ingredients briefly with the pestle.
- 12. Add the chopped herbs, olive oil, and vinegar to the mortar.
- 13. Crush everything into a creamy, pesto-like consistency.
- 14. Finally, season the sauce with black pepper.
- 15. Transfer the chimichurri into jars for storage or serve it immediately.
