  1. 1. Halve the onion, peel it, and cut it into small cubes.
  2. 2. Peel the garlic and chop it very finely.
  3. 3. Wash the bell pepper, halve it, and remove the stem and seeds.
  4. 4. Cut the bell pepper into bite-sized pieces.
  5. 5. Halve the chili pepper, remove the inside, and chop it finely.
  6. 6. Drain the kidney beans and corn in a sieve.
  7. 7. Heat two tablespoons of oil in a frying pan over high heat.
  8. 8. Fry the vegan mince in it for about eight minutes until crumbly.
  9. 9. Remove the fried vegan mince from the pan and place it on a plate.
  10. 10. Heat two tablespoons of oil in a pot over medium heat.
  11. 11. Sauté the bell pepper and onions in it for about two minutes.
  12. 12. Add the garlic and chili pepper and cook them for another two minutes.
  13. 13. Return the fried vegan mince and the tomato paste to the pot.
  14. 14. Continue frying until it takes on a dark color and starts to stick slightly to the bottom of the pot.
  15. 15. Deglaze the mixture with red wine.
  16. 16. Let it simmer for about five minutes until the alcohol has evaporated.
  17. 17. Add the vegetable broth, bay leaf, paprika spices, thyme, and optionally some chili powder.
  18. 18. Let the chili sin carne simmer for about sixty minutes.
  19. 19. Add the corn, beans, and chocolate.
  20. 20. Season the chili with salt, some pepper, and optionally more chili powder to taste.
  21. 21. Let the chili rest for about ten minutes without heat.
  22. 22. Serve the chili sin carne on plates.
  23. 23. Garnish with fresh coriander if desired.
  24. 24. Serve it with baguette or rice.
