🍽️ Hearty Chili Sin Carne

Ingredients
- onions, yellow 1 pc.
- garlic cloves 1 pc.
- bell pepper, red 1 pc.
- bell pepper, yellow 1 pc.
- hot pepper mix 1 pc.
- kidney beans 800 g
- corn from the can 200 g
- oil 4 tbsp
- Vemondo vegan mince 300 g
- tomato paste 2 tbsp
- red wine, dry 250 ml
- vegetable broth 800 ml
- bay leaves, dried pinch
- paprika, sweet 1 tsp
- rose paprika 1 tsp
- thyme, ground 1 tsp
- chocolate, dark 20 g
- chili, ground 0.5 tsp
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Halve the onion, peel it, and cut it into small cubes.
- 2. Peel the garlic and chop it very finely.
- 3. Wash the bell pepper, halve it, and remove the stem and seeds.
- 4. Cut the bell pepper into bite-sized pieces.
- 5. Halve the chili pepper, remove the inside, and chop it finely.
- 6. Drain the kidney beans and corn in a sieve.
- 7. Heat two tablespoons of oil in a frying pan over high heat.
- 8. Fry the vegan mince in it for about eight minutes until crumbly.
- 9. Remove the fried vegan mince from the pan and place it on a plate.
- 10. Heat two tablespoons of oil in a pot over medium heat.
- 11. Sauté the bell pepper and onions in it for about two minutes.
- 12. Add the garlic and chili pepper and cook them for another two minutes.
- 13. Return the fried vegan mince and the tomato paste to the pot.
- 14. Continue frying until it takes on a dark color and starts to stick slightly to the bottom of the pot.
- 15. Deglaze the mixture with red wine.
- 16. Let it simmer for about five minutes until the alcohol has evaporated.
- 17. Add the vegetable broth, bay leaf, paprika spices, thyme, and optionally some chili powder.
- 18. Let the chili sin carne simmer for about sixty minutes.
- 19. Add the corn, beans, and chocolate.
- 20. Season the chili with salt, some pepper, and optionally more chili powder to taste.
- 21. Let the chili rest for about ten minutes without heat.
- 22. Serve the chili sin carne on plates.
- 23. Garnish with fresh coriander if desired.
- 24. Serve it with baguette or rice.
