🍽️ Crispy Chili Cheese Fries

Ingredients
- frozen french fries 1 kg
- red onions 1 pc.
- garlic cloves 1 pc.
- fresh cilantro 20 g
- chopped tomatoes 425 g
- kidney beans 100 g
- oil 2 tbsp
- ground beef 250 g
- salt pinch
- chili flakes pinch
- sweet paprika pinch
- black ground pepper pinch
- cheddar 100 g
- butter 1 tbsp
- wheat flour, Type 405 1 tbsp
- milk 150 ml
- Sriracha sauce 0.1 tsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Line a baking tray with baking paper.
- 3. Spread the fries evenly on the tray.
- 4. Bake the fries for about 20 minutes until golden brown.
- 5. Turn the fries once halfway through the baking time.
- 6. Peel the onion and garlic.
- 7. Finely dice the onion and garlic.
- 8. Wash the fresh coriander and shake it dry.
- 9. Roughly pick off the coriander leaves and set them aside.
- 10. Finely chop the coriander stems.
- 11. Drain the kidney beans in a sieve.
- 12. Heat oil in a pot on high heat.
- 13. Fry the minced beef with a little salt for 5 to 6 minutes until crispy.
- 14. Add the onions, garlic, and coriander stems.
- 15. Sauté the vegetables for 2 to 3 minutes.
- 16. Season the mixture with chili flakes, paprika powder, salt, and pepper.
- 17. Toast the spices for another 2 minutes.
- 18. Add the chopped tomatoes and drained kidney beans to the pot.
- 19. Simmer the chili for 20 to 30 minutes on low to medium heat.
- 20. Stir the chili occasionally.
- 21. Season the finished chili tastefully with salt and pepper.
- 22. Grate the cheddar cheese.
- 23. Melt the butter in a pot on medium heat.
- 24. Sift the flour over the butter.
- 25. Cook the flour in the butter, stirring constantly, for 2 minutes until light yellow.
- 26. Deglaze the mixture with milk while continuing to stir.
- 27. Gradually mix the grated cheese into the sauce.
- 28. Add the Sriracha sauce to the cheese sauce.
- 29. Season the sauce with chili flakes and a little salt.
- 30. Take the golden and crispy fries out of the oven.
- 31. Salt the fries immediately after removing them.
- 32. Fill the fries with the chili and cheese sauce.
- 33. Sprinkle the fries with the prepared coriander leaves.
- 34. Serve the fries immediately and enjoy.
