🍽️ Chicken with Chili, Basil, Beans, and Rice

Ingredients
- Salt pinch
- Onions, red 2 pcs
- Zucchini 2 pcs
- Green beans 400 g
- Jasmine rice 300 g
- Chicken breast fillets 600 g
- Oil 3 tbsp
- Chili, ground pinch
- Organic limes 2 pcs
- Peanuts 60 g
- Basil, fresh 20 g
- Soy sauce 2 tbsp
- Sugar pinch
Instructions
- 1. Bring about 1 liter of salted water to a boil in a pot and cover it.
- 2. Halve the onions, peel them, and slice them into thin strips.
- 3. Wash the zucchini thoroughly, trim the ends, and cut them lengthwise into quarters.
- 4. Slice the zucchini quarters diagonally into thin pieces.
- 5. Wash the beans and remove the ends.
- 6. Cut the beans into pieces about 3 cm long.
- 7. Cook the beans in the boiling salted water for 8 to 10 minutes.
- 8. Drain the beans, rinse them with cold water, and let them drain.
- 9. Clean the pot.
- 10. Add the rice and 700 ml of salted water to the pot and bring to a boil.
- 11. Simmer the rice without the lid for about 10 minutes.
- 12. Wash the chicken and pat it dry thoroughly.
- 13. Cut the chicken into four strips of equal thickness.
- 14. Season the chicken strips with salt.
- 15. Heat 2 tablespoons of oil in a frying pan over high heat.
- 16. Fry the meat in the pan for about 2 minutes on all sides.
- 17. Place the chicken on a plate.
- 18. Do not clean the pan.
- 19. Mix 1 tablespoon of oil with chili in a bowl.
- 20. Add the chili oil to the pan with the pan drippings.
- 21. Fry the onions for 1 to 2 minutes over medium heat.
- 22. Add the zucchini.
- 23. Fry the vegetables for another 3 minutes.
- 24. Wash the limes and halve them.
- 25. Squeeze the juice from the lime halves.
- 26. Chop the peanuts coarsely.
- 27. Wash the basil and shake it dry.
- 28. Pluck the basil leaves from the stems.
- 29. Add the chicken and beans to the vegetables in the pan.
- 30. Season the mixture with soy sauce, sugar, and 3 tablespoons of lime juice.
- 31. Heat the pan for about 1 minute, stirring occasionally.
- 32. Stir in the basil at the end.
- 33. Fluff the rice with a fork.
- 34. Season the rice with the remaining lime juice.
- 35. Plate the chicken.
- 36. Garnish the dish with the peanuts.
