🍽️ Chicory Bites with Persimmon Salsa and Salami

Ingredients
- shallots 1 pc.
- kaki 2 pc.
- walnut kernels 2 tbsp.
- parsley, fresh 20 g
- oranges 1 pc.
- honey 1 tbsp.
- olive oil 2 tbsp.
- salt pinch
- pepper, black ground pinch
- chicory 1 pc.
- salami sliced 100 g
Instructions
- 1. Halve the shallot, peel it, and dice finely. Wash the persimmon and cut it into small cubes. Chop the walnuts. Wash the parsley, dry it, pluck the leaves from the stems, and chop. Wash the orange, zest about 1 teaspoon, halve it, and squeeze out the juice.
- 2. In a bowl, mix honey with the orange zest, juice, and oil. Season with salt and pepper, then add the shallot, persimmon, walnuts, and parsley to the dressing.
- 3. Wash the chicory, carefully separate the leaves, and fill each leaf with a bit of persimmon salsa. Place slices of salami on top and arrange the chicory bites.
