🍽️ Crispy Chicken Roll with Caesar Dip

Ingredients
- chicken breast fillet, marinated with rosemary 450 g
- parmesan 30 g
- gherkins 4 pcs.
- parsley, fresh 10 g
- mustard 1 tbsp
- oil 5 tbsp
- mayonnaise 2 tbsp
- salt pinch
- pepper, black ground pinch
- baguette 1 pc.
- butter 2 tbsp
- mini romaine 2 pcs.
- roma tomatoes 2 pcs.
Instructions
- 1. Preheat the oven to 200 degrees Celsius fan-forced.
- 2. Take the chicken breast out of the fridge to let it reach room temperature.
- 3. Grate half of the Parmesan cheese finely.
- 4. Dice the gherkins finely.
- 5. Wash the parsley and shake off excess water.
- 6. Finely chop the parsley.
- 7. Mix one tablespoon of mustard with the grated Parmesan in a bowl.
- 8. Slowly drizzle in three tablespoons of oil while stirring constantly.
- 9. Fold in two tablespoons of mayonnaise.
- 10. Add the chopped parsley and diced gherkins.
- 11. Loosen the sauce slightly by stirring in some of the gherkin juice.
- 12. Season the sauce with salt and pepper to taste.
- 13. Heat two tablespoons of oil in a frying pan over high heat.
- 14. Fry the chicken breast fillets on all sides for about four to five minutes until golden brown.
- 15. Remove the pan from the heat.
- 16. Let the fillets rest with the lid closed for about four minutes.
- 17. Slice the baguettes lengthwise through the middle.
- 18. Brush the cut surfaces with two tablespoons of butter.
- 19. Lightly salt and pepper the bread.
- 20. Place the baguettes on a baking sheet lined with baking paper, cut side up.
- 21. Bake the rolls in the oven for about eight to ten minutes until crispy.
- 22. Wash the lettuce thoroughly.
- 23. Trim off the hard base of the stem thinly.
- 24. Separate the individual lettuce leaves.
- 25. Wash the tomatoes.
- 26. Remove the core from the tomatoes.
- 27. Slice the tomatoes into thin rounds.
- 28. Take the baguettes out of the oven.
- 29. Spread the Caesar sauce generously on the cut surfaces.
- 30. Top the bottom halves of the bread with lettuce.
- 31. Place the tomato slices on the lettuce.
- 32. Place the chicken fillets on the tomatoes.
- 33. Shave the remaining Parmesan roughly over the filling.
- 34. Close the sandwiches with the top halves of the bread.
- 35. Portion the sandwiches and serve them.
