  2. 2. Melt the butter in a small saucepan over medium heat.
  3. 3. Place the butter cookies in a freezer bag and crush them finely.
  4. 4. Mix the cookie crumbs with the melted butter.
  5. 5. Line a springform pan with baking paper and grease it lightly.
  6. 6. Press the cookie-butter mixture evenly into the pan.
  7. 7. Bake the base for about 10 minutes.
  8. 8. Let the cookie base cool down completely.
  9. 9. Reduce the oven temperature to 160 degrees Celsius fan-forced.
  10. 10. Whisk cream cheese, crème fraîche, powdered sugar, vanilla sugar, and eggs in a bowl until smooth.
  11. 11. Pour the cheese cream over the pre-baked base.
  12. 12. Bake the cake for about 40 to 45 minutes until the surface is just set.
  13. 13. Turn off the oven and let the cake sit inside for 5 minutes.
  14. 14. Remove the cake and let it cool on a wire rack.
  15. 15. Cover the pan with cling film.
  16. 16. Let the cake chill in the fridge for at least 3 hours or overnight.
  17. 17. Let the frozen berries thaw overnight in a sieve.
  18. 18. Catch the draining berry juice in a container.
  19. 19. Distribute the thawed berries over the cooled cheesecake.
  20. 20. Add water to the berry juice until you have exactly 250 milliliters of liquid.
  21. 21. Whisk the liquid in a saucepan with cake glaze powder and sugar.
  22. 22. Bring the mixture to a brief boil while stirring constantly.
  23. 23. Pour the hot sauce evenly over the berries on the cake.
  24. 24. Let the glaze set.
  25. 25. Carefully release the cheesecake from the pan before serving.
