Ingredients
- butter 100 g
- butter cookies 200 g
- cream cheese, plain 400 g
- crème fraîche 200 g
- powdered sugar 150 g
- vanilla sugar 2 tsp
- eggs 2 pcs
- mixed berries, frozen 500 g
- cake glaze 10 g
- sugar 3 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Melt the butter in a small saucepan over medium heat.
- 3. Place the butter cookies in a freezer bag and crush them finely.
- 4. Mix the cookie crumbs with the melted butter.
- 5. Line a springform pan with baking paper and grease it lightly.
- 6. Press the cookie-butter mixture evenly into the pan.
- 7. Bake the base for about 10 minutes.
- 8. Let the cookie base cool down completely.
- 9. Reduce the oven temperature to 160 degrees Celsius fan-forced.
- 10. Whisk cream cheese, crème fraîche, powdered sugar, vanilla sugar, and eggs in a bowl until smooth.
- 11. Pour the cheese cream over the pre-baked base.
- 12. Bake the cake for about 40 to 45 minutes until the surface is just set.
- 13. Turn off the oven and let the cake sit inside for 5 minutes.
- 14. Remove the cake and let it cool on a wire rack.
- 15. Cover the pan with cling film.
- 16. Let the cake chill in the fridge for at least 3 hours or overnight.
- 17. Let the frozen berries thaw overnight in a sieve.
- 18. Catch the draining berry juice in a container.
- 19. Distribute the thawed berries over the cooled cheesecake.
- 20. Add water to the berry juice until you have exactly 250 milliliters of liquid.
- 21. Whisk the liquid in a saucepan with cake glaze powder and sugar.
- 22. Bring the mixture to a brief boil while stirring constantly.
- 23. Pour the hot sauce evenly over the berries on the cake.
- 24. Let the glaze set.
- 25. Carefully release the cheesecake from the pan before serving.
