  1. 1. Take the frozen raspberries and blueberries out of the freezer and let them thaw briefly.
  2. 2. Put the biscuits into a freezer bag.
  3. 3. Crush the biscuits thoroughly with your hands.
  4. 4. Melt the butter in a pot.
  5. 5. Mix the melted butter with the biscuit crumbs.
  6. 6. Fill the biscuit mixture into a springform pan.
  7. 7. Press the mixture firmly to form a base.
  8. 8. Place the pan with the base in the refrigerator.
  9. 9. Soak the gelatin in cold water.
  10. 10. Prepare a bowl with the soaked gelatin sheet.
  11. 11. Wash the lemon thoroughly with hot water.
  12. 12. Grate about two teaspoons of fine lemon zest.
  13. 13. Cut the lemon in half.
  14. 14. Squeeze the juice from the lemon.
  15. 15. Put cream cheese, mascarpone, sugar, lemon zest, and one tablespoon of lemon juice into a bowl.
  16. 16. Stir the ingredients until creamy.
  17. 17. Put the whipping cream into a tall container.
  18. 18. Whip the cream stiffly using a hand mixer and whisk.
  19. 19. Squeeze the soaked gelatin well.
  20. 20. Warm the gelatin in a pot over medium heat.

  22. 22. Stir one or two tablespoons of the cheese cream into the liquid gelatin.
  23. 23. Pour the gelatin mixture back into the large bowl with the rest of the cream.

  26. 26. Spread two-thirds of the cream evenly over the biscuit base.
  27. 27. Place the berries on the cream.
  28. 28. Gently mix the berries into the cream with a spoon.
  29. 29. Pour the remaining cream over the berries.
  30. 30. Smooth the surface.
  31. 31. Let the cheesecake chill in the refrigerator for at least three hours.
  32. 32. Cut the cheesecake into small pieces of about two by two centimeters.
  33. 33. Arrange the bites on a serving plate.
  34. 34. Decorate them with fresh mint if desired.
