🍰 Mini Cheesecakes with Berries

Ingredients
- frozen raspberries 100 g
- frozen blueberries 100 g
- butter cookies 200 g
- butter 150 g
- gelatin sheets 6 pcs.
- lemons 1 pc.
- cream cheese, plain 400 g
- mascarpone 250 g
- brown sugar 100 g
- whipping cream 400 g
- fresh mint 10 g
Instructions
- 1. Take the frozen raspberries and blueberries out of the freezer and let them thaw briefly.
- 2. Put the biscuits into a freezer bag.
- 3. Crush the biscuits thoroughly with your hands.
- 4. Melt the butter in a pot.
- 5. Mix the melted butter with the biscuit crumbs.
- 6. Fill the biscuit mixture into a springform pan.
- 7. Press the mixture firmly to form a base.
- 8. Place the pan with the base in the refrigerator.
- 9. Soak the gelatin in cold water.
- 10. Prepare a bowl with the soaked gelatin sheet.
- 11. Wash the lemon thoroughly with hot water.
- 12. Grate about two teaspoons of fine lemon zest.
- 13. Cut the lemon in half.
- 14. Squeeze the juice from the lemon.
- 15. Put cream cheese, mascarpone, sugar, lemon zest, and one tablespoon of lemon juice into a bowl.
- 16. Stir the ingredients until creamy.
- 17. Put the whipping cream into a tall container.
- 18. Whip the cream stiffly using a hand mixer and whisk.
- 19. Squeeze the soaked gelatin well.
- 20. Warm the gelatin in a pot over medium heat.
- 21. Let the gelatin melt.
- 22. Stir one or two tablespoons of the cheese cream into the liquid gelatin.
- 23. Pour the gelatin mixture back into the large bowl with the rest of the cream.
- 24. Mix the gelatin thoroughly with the rest of the cream.
- 25. Gently fold in the whipped cream.
- 26. Spread two-thirds of the cream evenly over the biscuit base.
- 27. Place the berries on the cream.
- 28. Gently mix the berries into the cream with a spoon.
- 29. Pour the remaining cream over the berries.
- 30. Smooth the surface.
- 31. Let the cheesecake chill in the refrigerator for at least three hours.
- 32. Cut the cheesecake into small pieces of about two by two centimeters.
- 33. Arrange the bites on a serving plate.
- 34. Decorate them with fresh mint if desired.
