🍰 Fruity Chocolate Cheesecake Bars

Ingredients
- butter cookies 200 g
- butter 85 g
- chocolate, white 170 g
- cream cheese, plain 500 g
- sugar 90 g
- organic limes 1 pc
- wheat flour, type 405 15 g
- salt pinch
- vanilla sugar 1 packet
- eggs 3 pcs
- raspberries, fresh 200 g
- cornstarch 1 tbsp
Instructions
- 1. Preheat the oven to 175 degrees Celsius with top and bottom heat.
- 2. Line a square baking pan (approx. 22 x 22 cm) with baking paper.
- 3. Place the cookies into a freezer bag.
- 4. Crush the cookies into very fine crumbs using a rolling pin.
- 5. Melt the butter in a pot over low heat for about 2 to 3 minutes.
- 6. Mix the cookie crumbs with the melted butter.
- 7. Press the crumb mixture evenly onto the bottom of the pan.
- 8. Break the chocolate into small pieces.
- 9. Melt the chocolate pieces in a double boiler.
- 10. Beat the cream cheese and 65 grams of sugar with a mixer until creamy for 2 to 3 minutes.
- 11. Wash the lime with hot water and dry it.
- 12. Finely grate the zest of the lime.
- 13. Halve the lime and squeeze out the juice.
- 14. Add the lime zest, lime juice, flour, salt, vanilla sugar, and eggs to the cheese mixture.
- 15. Mix all ingredients well together.
- 16. Add the melted chocolate.
- 17. Blend the mixture until it is smooth.
- 18. Spread the cheese mixture evenly over the cookie base.
- 19. Wash the raspberries.
- 20. Reserve a few raspberries for decoration.
- 21. Puree the remaining raspberries in a tall container with 25 grams of sugar and starch.
- 22. Dollop the raspberry puree spoonful by spoonful onto the cheesecake mixture.
- 23. Draw patterns into the batter using a toothpick.
- 24. Bake the bars in the oven for about 35 minutes.
- 25. Let the bars cool down for 1 hour before serving.
- 26. Garnish the bars with the reserved fresh raspberries.
- 27. Serve the bars and enjoy.
