  1. 1. Preheat the oven to 175 degrees Celsius with top and bottom heat.
  2. 2. Line a square baking pan (approx. 22 x 22 cm) with baking paper.
  3. 3. Place the cookies into a freezer bag.
  4. 4. Crush the cookies into very fine crumbs using a rolling pin.
  5. 5. Melt the butter in a pot over low heat for about 2 to 3 minutes.
  6. 6. Mix the cookie crumbs with the melted butter.
  7. 7. Press the crumb mixture evenly onto the bottom of the pan.
  8. 8. Break the chocolate into small pieces.
  9. 9. Melt the chocolate pieces in a double boiler.
  10. 10. Beat the cream cheese and 65 grams of sugar with a mixer until creamy for 2 to 3 minutes.
  11. 11. Wash the lime with hot water and dry it.
  12. 12. Finely grate the zest of the lime.
  13. 13. Halve the lime and squeeze out the juice.
  14. 14. Add the lime zest, lime juice, flour, salt, vanilla sugar, and eggs to the cheese mixture.
  15. 15. Mix all ingredients well together.
  16. 16. Add the melted chocolate.
  17. 17. Blend the mixture until it is smooth.
  18. 18. Spread the cheese mixture evenly over the cookie base.
  19. 19. Wash the raspberries.
  20. 20. Reserve a few raspberries for decoration.
  21. 21. Puree the remaining raspberries in a tall container with 25 grams of sugar and starch.
  22. 22. Dollop the raspberry puree spoonful by spoonful onto the cheesecake mixture.
  23. 23. Draw patterns into the batter using a toothpick.
  24. 24. Bake the bars in the oven for about 35 minutes.
  25. 25. Let the bars cool down for 1 hour before serving.
  26. 26. Garnish the bars with the reserved fresh raspberries.
  27. 27. Serve the bars and enjoy.
