🍽️ Soft Chapattis (Indian Flatbread)

Ingredients
- Spelt flour, Type 630 300 g
- Salt pinch
- Wheat flour, Type 405 30 g
- Ghee 2 tbsp
Instructions
- 1. Put spelt flour and 1 level teaspoon of salt into a bowl and mix them together.
- 2. Slowly pour about 200 milliliters of hot water into the flour mixture and knead everything well.
- 3. Work the dough on a lightly floured surface for 5 to 8 minutes until it is smooth, pliable, and no longer sticky.
- 4. Brush the ball of dough thinly with 1 teaspoon of ghee (melted clarified butter).
- 5. Cover the dough and let it rest for about 1 hour.
- 6. After the resting time, divide the dough into 12 equal pieces.
- 7. Roll each piece out on a lightly floured surface until it has a diameter of about 15 centimeters.
- 8. Heat a pan (preferably cast iron) over medium to high heat.
- 9. Cook the chapattis one by one in the hot pan for 1 to 2 minutes per side.
- 10. Remove the chapattis from the pan as soon as they show lightly browned spots.
- 11. Drizzle the hot flatbreads with the remaining liquid ghee.
- 12. Sprinkle with a little salt and serve the chapattis hot immediately.
