  1. 1. Put spelt flour and 1 level teaspoon of salt into a bowl and mix them together.
  2. 2. Slowly pour about 200 milliliters of hot water into the flour mixture and knead everything well.
  3. 3. Work the dough on a lightly floured surface for 5 to 8 minutes until it is smooth, pliable, and no longer sticky.
  4. 4. Brush the ball of dough thinly with 1 teaspoon of ghee (melted clarified butter).
  5. 5. Cover the dough and let it rest for about 1 hour.
  6. 6. After the resting time, divide the dough into 12 equal pieces.
  7. 7. Roll each piece out on a lightly floured surface until it has a diameter of about 15 centimeters.
  8. 8. Heat a pan (preferably cast iron) over medium to high heat.
  9. 9. Cook the chapattis one by one in the hot pan for 1 to 2 minutes per side.
  10. 10. Remove the chapattis from the pan as soon as they show lightly browned spots.
  11. 11. Drizzle the hot flatbreads with the remaining liquid ghee.
  12. 12. Sprinkle with a little salt and serve the chapattis hot immediately.
