  1. 1. Peel the garlic clove and chop it very finely.
  2. 2. Wash the parsley and pat it completely dry with a kitchen towel.
  3. 3. Pick the parsley leaves off the tough stems and chop them finely as well.
  4. 4. Add half of the chopped parsley, the minced meat, the garlic, the paprika powder, salt, and pepper to a large bowl.
  5. 5. Mix all ingredients thoroughly with your hands or a spoon.
  6. 6. Shape the meat mixture into even, finger-thick rolls.
  7. 7. Heat some oil in a frying pan over medium heat.
  8. 8. Fry the meat rolls on all sides for about 12 minutes until golden brown.
  9. 9. Rinse the cucumber and cut off the ends.
  10. 10. Cut the cucumber lengthwise into quarters and then into bite-sized pieces.
  11. 11. Wash the tomatoes and cut each one in half.
  12. 12. Halve the shallot, peel it, and slice it into thin rings.
  13. 13. Cut the feta cheese into small cubes.
  14. 14. Wash the lemon, cut it in half, and squeeze out the juice.
  15. 15. Mix the olive oil with two tablespoons of lemon juice in a separate bowl.
  16. 16. Season the dressing with salt and pepper to taste.
  17. 17. Add the cucumber, tomato halves, shallot rings, feta, remaining parsley, and black olives to the bowl with the dressing.
  18. 18. Gently toss the ingredients so they are evenly coated with the dressing.
  19. 19. Plate the grilled meat skewers.
  20. 20. Serve with the Greek salad and baguette.
