  2. 2. Grate the carrot finely using a coarse grater.
  3. 3. Place walnuts, dates, walnut oil, cinnamon, and the grated carrot into a tall container or a food processor.
  4. 4. Blend the ingredients until a sticky, fine-crumb mixture forms.
  5. 5. Take teaspoon-sized portions of the mixture and roll them into balls between your hands.
  6. 6. Put the cornflakes into a plastic bag.
  7. 7. Crush the cornflakes in the bag using a rolling pin.
  8. 8. Roll half of the oat balls in oat flakes.
  9. 9. Roll the other half of the oat balls in the crushed cornflakes.
  10. 10. Store the finished balls in a box or a jar until serving.
