  1. 1. Peel the melon, remove the seeds, and cut into cubes. Then puree in a tall container and pass through a sieve. Halve the lemon and the orange and squeeze out the juice.
  2. 2. In the tall container, mix the melon juice with the lemon juice, orange juice, and sugar to taste.
  3. 3. For each glass, vigorously shake 1/4 of the melon mixture with 2 cl Aperol and ice cubes. Strain into long drink glasses and top up the Caribbean Melon with cold mineral water. Cheers!
