🍲 Portuguese Green Soup with Chorizo

Ingredients
- Kale, fresh 600 g
- Onions, yellow 2 pcs.
- Garlic cloves 1 pcs.
- Potatoes, mostly waxy 600 g
- Olive oil 3 tbsp
- Vegetable broth 1 L
- Salt pinch
- Pepper, black ground pinch
- Chorizo 250 g
Instructions
- 1. Wash the kale thoroughly and cut it into small pieces.
- 2. Peel the onions and garlic and dice them finely.
- 3. Peel the potatoes, rinse them, and cut them into cubes.
- 4. Heat two tablespoons of oil in a pot over medium to high heat.
- 5. Sauté the onions and garlic for two to three minutes until they become translucent.
- 6. Set aside about 100 grams of the kale.
- 7. Add the potatoes and the remaining kale to the pot.
- 8. Pour in the broth and season the soup with salt and pepper.
- 9. Cook the soup covered for 15 to 20 minutes until the vegetables are tender.
- 10. Slice the chorizo sausage into rounds about two centimeters thick.
- 11. Mash the soup slightly and taste it to adjust the seasoning.
- 12. Add the remaining kale to the soup and cook it covered for another five to seven minutes.
- 13. Heat one tablespoon of oil in a frying pan.
- 14. Fry the sausage slices for two to three minutes on both sides.
- 15. Serve the soup in bowls or plates and top with the fried sausage.
