🍰 Creamy Coffee Gratin with Thyme Plums

Ingredients
- heavy cream 175 g
- brown sugar 70 g
- coffee, instant 75 g
- eggs 3 pcs.
- plums 200 g
- thyme, fresh 10 g
- butter 1 tbsp
- port wine 2 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Place the cream and 50 grams of sugar in a pot.
- 3. Heat the mixture over medium heat until it boils.
- 4. Stir the coffee into the hot cream.
- 5. Remove the pot from the heat.
- 6. Separate one egg and reserve the yolk from the white.
- 7. Mix the egg yolk with two whole eggs in a bowl.
- 8. Whisk the eggs until foamy using a hand mixer.
- 9. Slowly pour the hot cream into the eggs while stirring.
- 10. Strain the egg mixture through a fine sieve.
- 11. Fill the cream evenly into ovenproof ramekins.
- 12. Bake the ramekins in the oven for about 40 minutes until the cream sets.
- 13. Switch the oven to grill mode.
- 14. Sprinkle the remaining sugar over the cream.
- 15. Caramelize the sugar for about 3 minutes under the grill.
- 16. Let the café brulé cool down.
- 17. Wash the plums thoroughly.
- 18. Halve the plums and remove the pits.
- 19. Wash the thyme and shake it dry.
- 20. Pluck the thyme leaves from the stems.
- 21. Heat a frying pan over medium heat.
- 22. Melt the butter in the pan.
- 23. Add the plums to the pan and cook them for about 4 minutes.
- 24. Deglaze the plums with port wine.
- 25. Add the thyme.
- 26. Let the plum mixture cool down.
- 27. Serve the café brulé with the thyme plums while lukewarm.
- 28. Enjoy your meal!
