  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Place the cream and 50 grams of sugar in a pot.
  3. 3. Heat the mixture over medium heat until it boils.
  4. 4. Stir the coffee into the hot cream.
  5. 5. Remove the pot from the heat.
  6. 6. Separate one egg and reserve the yolk from the white.
  7. 7. Mix the egg yolk with two whole eggs in a bowl.
  8. 8. Whisk the eggs until foamy using a hand mixer.
  9. 9. Slowly pour the hot cream into the eggs while stirring.
  10. 10. Strain the egg mixture through a fine sieve.
  11. 11. Fill the cream evenly into ovenproof ramekins.
  12. 12. Bake the ramekins in the oven for about 40 minutes until the cream sets.
  13. 13. Switch the oven to grill mode.
  14. 14. Sprinkle the remaining sugar over the cream.
  15. 15. Caramelize the sugar for about 3 minutes under the grill.
  16. 16. Let the café brulé cool down.
  17. 17. Wash the plums thoroughly.
  18. 18. Halve the plums and remove the pits.
  19. 19. Wash the thyme and shake it dry.
  20. 20. Pluck the thyme leaves from the stems.
  21. 21. Heat a frying pan over medium heat.
  22. 22. Melt the butter in the pan.
  23. 23. Add the plums to the pan and cook them for about 4 minutes.
  24. 24. Deglaze the plums with port wine.
  25. 25. Add the thyme.
  26. 26. Let the plum mixture cool down.
  27. 27. Serve the café brulé with the thyme plums while lukewarm.
