🍰 Crunchy Butter Cookies with Lemon Glaze

Ingredients
- butter 75 g
- sugar 80 g
- salt pinch
- wheat flour, Type 405 170 g
- baking powder 1 tsp
- eggs 1 pc
- lemons 1 pc
- powdered sugar 100 g
- sugar pearls 6 tbsp
Instructions
- 1. Put soft butter, sugar, a pinch of salt, flour, baking powder, and an egg into a mixing bowl.
- 2. Mix the ingredients for 40 seconds on speed 5 until you have a smooth dough.
- 3. Wrap the dough tightly in cling film.
- 4. Place the foil in the refrigerator for at least one and a half hours.
- 5. Preheat the oven to 175 degrees Celsius with top and bottom heat.
- 6. Dust a work surface with flour.
- 7. Take the dough out of the fridge and roll it out to about four millimeters thick.
- 8. Cut out snowflake shapes with a diameter of four to five centimeters.
- 9. Place the cookies on a baking sheet lined with baking paper.
- 10. Bake the cookies for about twelve minutes until the edges are lightly browned.
- 11. Let the cookies cool completely on a wire rack.
- 12. Squeeze the juice from a halved lemon.
- 13. Whisk powdered sugar with two tablespoons of lemon juice to make a thick glaze.
- 14. Fill the glaze into a freezer bag and seal it.
- 15. Cut off a small corner of the bag tip.
- 16. Decorate the cooled cookies decoratively with the glaze.
- 17. Sprinkle the cookies with sugar pearls if desired.
- 18. Let the decorated cookies dry well.
