  1. 1. In a bowl, beat 75 g of butter with a hand mixer and whisk until creamy. Then add 125 g of sugar and a pinch of salt and mix well.
  2. 2. Whisk the eggs and, while stirring constantly, gradually incorporate the flour, baking powder, and buttermilk until a thick batter forms. If the batter is too thick, add a little more buttermilk.
  3. 3. Cut a lime in half and squeeze out the juice. In a pot, heat 80 g of sugar with the lime juice and 2 tbsp of butter and caramelize over medium heat for about 2 minutes. Then deglaze with cream and let the caramel simmer for about 3 minutes.
  4. 4. Preheat the waffle iron and lightly grease it. Pour one ladle of batter into the mold and bake the waffles for about 2–3 minutes until golden brown. Serve the buttermilk waffles with the caramel as desired. Enjoy your meal!
