  1. 1. Soak the gelatin in a bowl with cold water.
  2. 2. Thoroughly rinse the limes under hot water.
  3. 3. Grate the fine zest from one lime (approx. 1 teaspoon).
  4. 4. Halve the limes and squeeze out the juice.
  5. 5. Mix the buttermilk with powdered sugar, the lime zest, and the lime juice in a separate bowl.
  6. 6. Dissolve the soaked gelatin in a saucepan over low heat.
  7. 7. Stir the dissolved gelatin into the buttermilk mixture.
  8. 8. Set the mixture aside to cool.
  9. 9. Whip the cream in a bowl until stiff using a hand mixer.
  10. 10. Wait until the buttermilk mixture starts to thicken slightly.
  11. 11. Gently fold the stiffly whipped cream into the buttermilk mixture.
  12. 12. Keep the mousse in the refrigerator until you are ready to serve.
  13. 13. Wash the nectarines and halve them.
  14. 14. Remove the pits from the nectarine halves.
  15. 15. Heat 1 tablespoon of oil in a pan over medium to high heat.
  16. 16. Fry the nectarine halves for about 3 to 4 minutes on the cut side.
  17. 17. Plate the grilled nectarines and the mousse.
  18. 18. Grate some of the remaining lime zest over the mousse.
  19. 19. Slice the lime.
  20. 20. Decorate the mousse with the lime slices.
  21. 21. Drizzle the mousse with a little honey.
  22. 22. Serve the dish and enjoy!
