🍰 Buttermilk Mousse with Grilled Nectarines

Ingredients
- leaf gelatin 4 pcs
- organic limes 2 pcs
- buttermilk 250 ml
- powdered sugar 40 g
- whipping cream 200 g
- nectarine 4 pcs
- honey 4 tsp
Instructions
- 1. Soak the gelatin in a bowl with cold water.
- 2. Thoroughly rinse the limes under hot water.
- 3. Grate the fine zest from one lime (approx. 1 teaspoon).
- 4. Halve the limes and squeeze out the juice.
- 5. Mix the buttermilk with powdered sugar, the lime zest, and the lime juice in a separate bowl.
- 6. Dissolve the soaked gelatin in a saucepan over low heat.
- 7. Stir the dissolved gelatin into the buttermilk mixture.
- 8. Set the mixture aside to cool.
- 9. Whip the cream in a bowl until stiff using a hand mixer.
- 10. Wait until the buttermilk mixture starts to thicken slightly.
- 11. Gently fold the stiffly whipped cream into the buttermilk mixture.
- 12. Keep the mousse in the refrigerator until you are ready to serve.
- 13. Wash the nectarines and halve them.
- 14. Remove the pits from the nectarine halves.
- 15. Heat 1 tablespoon of oil in a pan over medium to high heat.
- 16. Fry the nectarine halves for about 3 to 4 minutes on the cut side.
- 17. Plate the grilled nectarines and the mousse.
- 18. Grate some of the remaining lime zest over the mousse.
- 19. Slice the lime.
- 20. Decorate the mousse with the lime slices.
- 21. Drizzle the mousse with a little honey.
- 22. Serve the dish and enjoy!
