🍰 Fluffy Buttermilk Pancakes with Warm Plum Compote

Ingredients
- Peaches 500 g
- Oranges 1 pc.
- Cinnamon 0.5 tsp
- Brown sugar 60 g
- Cornstarch 1 tsp
- Buttermilk 250 ml
- Eggs 2 pcs.
- Salt pinch
- Wheat flour, Type 405 200 g
- Baking powder 2 tsp
- Butter 3 tbsp
Instructions
- 1. Thoroughly wash the plums under running water.
- 2. Cut the plums in half and remove the pits.
- 3. Cut an orange in half and squeeze out the juice.
- 4. Place the plums, orange juice, one tablespoon of cinnamon, and the sugar into a pot.
- 5. Heat the mixture over medium heat until it boils.
- 6. Let the compote simmer until soft for about four to five minutes.
- 7. Mix some water with the starch in a small bowl.
- 8. Stir the starch-water mixture into the plum compote to thicken it slightly.
- 9. Allow the compote to cool down.
- 10. Whisk buttermilk, eggs, salt, and sugar in a bowl until frothy.
- 11. Mix flour and baking powder in a separate bowl.
- 12. Add the flour mixture to the wet ingredients and stir everything into a smooth batter.
- 13. Let the batter rest for about ten minutes.
- 14. Melt some butter in a frying pan over medium heat.
- 15. Pour the batter into the pan in portions of about five centimeters in diameter using a ladle.
- 16. Cook the pancakes for about two to three minutes on each side until golden brown.
- 17. Remove the finished pancakes and keep them warm.
- 18. Repeat the process until you have prepared about twelve pancakes.
- 19. Serve the pancakes with the plum compote.
