🍰 Moist Buttermilk Muffins with Lemon and Apple

Ingredients
- Lemons 1 pc
- Wheat flour, Type 405 150 g
- Baking powder 0.5 tsp
- Brown sugar 50 g
- Vanilla sugar 1 tbsp
- Apples, red 1 pc
- Eggs 1 pc
- Buttermilk 75 ml
- Butter 50 g
Instructions
- 1. Rinse the lemon under hot water.
- 2. Finely grate about one teaspoon of the zest.
- 3. Squeeze out the juice of the lemon.
- 4. Mix flour, baking powder, brown sugar, and vanilla sugar in a bowl.
- 5. Peel the apple.
- 6. Cut the apple into quarters.
- 7. Remove the core.
- 8. Dice the flesh into small cubes.
- 9. Fold the apple cubes into the flour mixture.
- 10. Whisk the egg with the lemon zest and juice.
- 11. Stir in the buttermilk and the softened butter.
- 12. Pull the liquid mixture under the flour mixture with a mixing spoon.
- 13. Mix the ingredients only as long as they are just combined.
- 14. Preheat the oven to 180 degrees top and bottom heat.
- 15. Stack two muffin liners together.
- 16. Place the liners on a baking tray.
- 17. Fill the liners with the batter.
- 18. Bake the muffins for about 20 minutes in the oven.
- 19. Take the muffins out when they are lightly browned.
- 20. Let the muffins cool down.
