🍽️ Colorful Roasted Potato Sticks in Air Fryer with Fresh Quark Dip

Ingredients
- potatoes, waxy 700 g
- onions, red 1 pc.
- zucchini 1 pc.
- bell pepper 1 pc.
- carrots 2 pcs.
- thyme, fresh 5 g
- salt pinch
- pepper, black ground pinch
- sugar 1 tsp
- paprika, sweet 3 tsp
- olive oil 3 tbsp
- cucumbers 1 pc.
- chives, fresh 20 g
- quark 20% fat in rem. 500 g
- cashew nuts 50 g
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into even sticks.
- 3. Halve the onion and remove the outer skin.
- 4. Cut the onion into thin strips.
- 5. Wash the zucchini, the bell pepper, the carrots, and the thyme.
- 6. Remove the hard ends from the zucchini.
- 7. Slice the zucchini diagonally into wide slices.
- 8. Halve the bell pepper and remove the stem and seeds.
- 9. Cut the bell pepper halves into wide pieces.
- 10. Halve the carrots lengthwise.
- 11. Cut the carrot halves into long pieces.
- 12. Place the prepared vegetables, potato sticks, and onion strips into a large bowl.
- 13. Season the mixture with salt, pepper, sugar, paprika powder, thyme, and olive oil.
- 14. Mix everything well until the vegetables are evenly seasoned.
- 15. Fill the basket of the air fryer with the vegetables.
- 16. Make sure not to overfill the basket.
- 17. Preheat the air fryer to 180 degrees Celsius.
- 18. Cook the vegetables for 10 minutes at 180 degrees Celsius.
- 19. Stir the vegetables once after 10 minutes.
- 20. Cook the vegetables for another 10 minutes at 180 degrees Celsius.
- 21. Wash the cucumber thoroughly.
- 22. Remove the ends of the cucumber.
- 23. Halve the cucumber lengthwise.
- 24. Remove the inside of the cucumber halves using a teaspoon.
- 25. Grate the cucumber on the fine side of the kitchen grater.
- 26. Rinse the chives and shake them dry.
- 27. Cut the chives into small rings.
- 28. Place the quark, grated cucumber, and chives into a bowl.
- 29. Whisk the ingredients for the dip well together.
- 30. Season the dip finally with salt and pepper.
- 31. Chop the cashew nuts coarsely.
- 32. Plate the finished vegetables.
- 33. Drizzle the vegetables with the juices from the air fryer.
- 34. Sprinkle the chopped cashew nuts over the vegetables.
- 35. Serve the vegetables with the quark dip.
