🥗 Colorful Salad with Fried Dumplings and Apple Wedges

Ingredients
- Radishes 1 bunch
- Cherry tomatoes 250 g
- Salad mix 250 g
- Apples, red 1 pc
- Parsley, fresh 20 g
- Salt pinch
- Hazelnut kernels, whole 3 tbsp
- Vegan Maultaschen 600 g
- Vinegar 2 tbsp
- Olive oil 6 tbsp
- Mustard 1 tsp
- Pepper, black ground pinch
- Sugar pinch
- Oil 2 tbsp
Instructions
- 1. Thoroughly wash the radishes under running water.
- 2. Trim the ends of the radishes and cut them into quarters.
- 3. Rinse the cherry tomatoes and cut them in half.
- 4. Wash the salad greens and dry them thoroughly in a salad spinner.
- 5. Peel the apple and remove the core.
- 6. Cut the apple into wedges.
- 7. Rinse the parsley and shake off excess water.
- 8. Pick the parsley leaves off the stems.
- 9. Finely chop the parsley leaves.
- 10. Roughly chop the hazelnuts.
- 11. Bring about 2 liters of water with salt to a boil in a pot.
- 12. Heat a frying pan over medium heat.
- 13. Toast the hazelnuts in the pan for about 2 to 3 minutes without additional fat.
- 14. Add the dumplings to the boiling salted water.
- 15. Do not let the water boil vigorously anymore.
- 16. Let the dumplings steep over low heat for about 6 to 8 minutes.
- 17. Put the chopped parsley into a bowl.
- 18. Add vinegar, olive oil, mustard, salt, pepper, and sugar to the parsley.
- 19. Mix the ingredients to form a dressing.
- 20. Put the radishes, cherry tomatoes, and salad greens into a separate bowl.
- 21. Gently toss the vegetables with the dressing.
- 22. Remove the dumplings from the water.
- 23. Let the dumplings drain briefly.
- 24. Heat 2 tablespoons of oil in a frying pan over medium heat.
- 25. Fry the dumplings for about 3 to 4 minutes until golden brown.
- 26. Add the apple wedges during the last 2 minutes of frying time.
- 27. Plate the salad onto serving dishes.
- 28. Place the fried dumplings and apple wedges on top of the salad.
- 29. Sprinkle the dish with the toasted hazelnuts.
- 30. Serve the salad immediately.
