🍽️ Colorful Quinoa and Feta Salad

Ingredients
- quinoa 300 g
- Vegetable broth 1.2 g
- feta 200 g
- Parsley, fresh 10 g
- Mint, fresh 10 g
- Peaches 2 pcs.
- Cherry tomatoes mix 100 g
- Mini cucumbers 2 pcs.
- Shallots 1 pcs.
- Olive oil 4 tbsp
- Organic limes 1 pcs.
- Salt pinch
- Pepper, black ground pinch
Instructions
- 1. Place the quinoa into the cooking insert and insert it into the mixing bowl.
- 2. Pour hot vegetable broth into the mixing bowl.
- 3. Cook the quinoa for 25 minutes at speed 1 and 100 degrees Celsius.
- 4. Crumble the feta cheese into a bowl using your hands.
- 5. Wash the parsley and mint and shake them dry.
- 6. Pluck the leaves off the herbs.
- 7. Wash the peaches and remove the pits.
- 8. Cut one peach into small cubes.
- 9. Wash the cherry tomatoes and halve them.
- 10. Wash the cucumber and peel it into thin strips using a vegetable peeler.
- 11. Halve the shallot and peel it.
- 12. Remove the cooked quinoa from the mixing bowl and transfer it to a separate bowl.
- 13. Clean the mixing bowl thoroughly.
- 14. Add the mint and parsley to the clean mixing bowl.
- 15. Chop the herbs for 4 seconds at speed 8.
- 16. Scrape down the sides of the bowl with a spatula.
- 17. Add the shallot, the diced peach, the oil, and two tablespoons of lime juice.
- 18. Blend the mixture for 10 seconds at speed 8.
- 19. Season the dressing with salt and pepper to taste.
- 20. Mix the quinoa with the dressing, the peach cubes, the tomatoes, and the cucumber strips.
- 21. Serve the salad with the crumbled feta cheese.
