🥗 Colorful Quinoa Salad with Peach and Feta

Ingredients
- Quinoa 300 g
- Salt 1 tsp
- Water 600 ml
- Olive oil 5 tbsp
- Peaches 4 pcs
- Cucumbers 1 pcs
- Cilantro, fresh 10 g
- Lemons 1 pcs
- feta 100 g
- Sweet mustard 1 tsp
Instructions
- 1. Rinse the quinoa thoroughly under lukewarm water in a sieve until the water runs clear.
- 2. Bring water with salt to a boil in a pot over high heat.
- 3. Add the quinoa to the boiling water.
- 4. Reduce the heat to low, cover the pot, and cook the quinoa for about 12 minutes.
- 5. Remove the pot from the heat and let the quinoa sit covered for another 5 minutes to absorb the moisture.
- 6. Stir 1 tablespoon of olive oil into the cooked quinoa.
- 7. Wash the peaches, halve them, and remove the pit.
- 8. Cut the peach halves into wedges.
- 9. Wash the cucumber and cut it in half.
- 10. Cut the cucumber halves into coarse chunks.
- 11. Wash the cilantro and shake off excess water.
- 12. Remove the thick stems from the cilantro.
- 13. Halve the lemon and squeeze out the juice.
- 14. Crumble the feta cheese into small pieces using your hands.
- 15. Whisk 2 tablespoons of lemon juice, salt, mustard, and sugar together in a bowl.
- 16. Pour 4 tablespoons of olive oil in a thin stream into the mixture.
- 17. Continue whisking the dressing until it is well combined.
- 18. Toss the quinoa, cucumber chunks, and peach wedges with the dressing.
- 19. Plate the salad on serving dishes.
- 20. Garnish the salad with the cilantro and feta cheese.
- 21. Serve the salad and enjoy your meal!
