  1. 1. Rinse the quinoa thoroughly under lukewarm water in a sieve until the water runs clear.
  2. 2. Bring water with salt to a boil in a pot over high heat.
  3. 3. Add the quinoa to the boiling water.
  4. 4. Reduce the heat to low, cover the pot, and cook the quinoa for about 12 minutes.
  5. 5. Remove the pot from the heat and let the quinoa sit covered for another 5 minutes to absorb the moisture.
  6. 6. Stir 1 tablespoon of olive oil into the cooked quinoa.
  7. 7. Wash the peaches, halve them, and remove the pit.
  8. 8. Cut the peach halves into wedges.
  9. 9. Wash the cucumber and cut it in half.
  10. 10. Cut the cucumber halves into coarse chunks.
  11. 11. Wash the cilantro and shake off excess water.
  12. 12. Remove the thick stems from the cilantro.
  13. 13. Halve the lemon and squeeze out the juice.
  14. 14. Crumble the feta cheese into small pieces using your hands.
  15. 15. Whisk 2 tablespoons of lemon juice, salt, mustard, and sugar together in a bowl.
  16. 16. Pour 4 tablespoons of olive oil in a thin stream into the mixture.
  17. 17. Continue whisking the dressing until it is well combined.
  18. 18. Toss the quinoa, cucumber chunks, and peach wedges with the dressing.
  19. 19. Plate the salad on serving dishes.
  20. 20. Garnish the salad with the cilantro and feta cheese.
