🍽️ Crispy Kale Chip Salad with Nuts

Ingredients
- Savoy cabbage 200 g
- Oil 5 tbsp
- Salt pinch
- Romana lettuce 1 pcs
- Apples, red 1 pcs
- Lemons 1 pcs
- Parmesan 50 g
- Walnut kernels 100 g
- Mustard 1 tsp
- Vinegar 2 tbsp
- Pepper, black ground pinch
- Sugar 1 tbsp
Instructions
- 1. Preheat the oven to 160 degrees Celsius with fan.
- 2. Remove the outer leaves from the kale.
- 3. Detach the leaves from the tough central stem.
- 4. Pull the green leafy part away from the thick ribs.
- 5. Cut the ribs into small, bite-sized pieces.
- 6. Wash the kale leaves thoroughly.
- 7. Spin the leaves dry in a salad spinner.
- 8. Place the dry kale leaves in a bowl.
- 9. Add two tablespoons of oil.
- 10. Season with a pinch of salt.
- 11. Massage the oil and salt into the leaves with your hands for about one minute.
- 12. Line two baking sheets with baking paper.
- 13. Distribute the kale leaves loosely over the trays.
- 14. Bake the chips in the oven for about 20 minutes until crispy.
- 15. Wash the salad greens thoroughly.
- 16. Spin the greens dry.
- 17. Cut the greens into thin strips.
- 18. Wash the apple.
- 19. Quarter the apple.
- 20. Remove the core and seeds.
- 21. Slice the apple into thin rounds.
- 22. Cut the lemon in half.
- 23. Squeeze the juice from the lemon.
- 24. Grate the Parmesan into small pieces.
- 25. Chop the walnuts coarsely.
- 26. Put mustard into a small bowl.
- 27. Add one tablespoon of vinegar.
- 28. Add one tablespoon of lemon juice.
- 29. Whisk these ingredients together well.
- 30. Slowly drizzle in three tablespoons of oil in a thin stream.
- 31. Season the dressing with salt.
- 32. Season the dressing with pepper.
- 33. Season the dressing with a pinch of sugar.
- 34. Place the cut salad greens in a large bowl.
- 35. Add the apple slices.
- 36. Pour the prepared dressing over the vegetables.
- 37. Toss everything well until evenly coated.
- 38. Serve the salad on plates.
- 39. Top the salad with the crispy kale chips.
- 40. Top the salad with the chopped walnuts.
