  1. 1. Peel the carrot and trim the ends. Cut the vegetable into thin strips.
  2. 2. Halve the avocado and remove the pit. Gently scoop the flesh out of the skin with a spoon. Slice the flesh.
  3. 3. Peel the mango and remove the pit. Cut the flesh into thin strips.
  4. 4. Wash the red cabbage and remove the hard core. Cut the cabbage into thin strips or use a grater.
  5. 5. Wash the shrimp and cut them in half lengthwise.
  6. 6. Wash the mint and coriander. Shake them dry and pick the leaves off the stems.
  7. 7. Fill a shallow bowl or baking dish with some water. Place a rice paper sheet in it and wet it evenly. Let it soak for about one minute.
  8. 8. Remove the soaked rice paper and let it drain briefly. Lay it flat on a cutting board.
  9. 9. Place the shrimp, carrot strips, avocado slices, red cabbage, and herbs in the center of the rice paper.
  10. 10. Fold the left and right sides of the rice paper towards the center.
  11. 11. Roll the roll tightly upwards from the bottom edge.
  12. 12. Repeat the process with the remaining rice paper until all ingredients are used up.
  13. 13. Serve the colorful summer rolls with shrimp immediately.
