🍽️ Colorful Summer Rolls with Shrimp

Ingredients
- Carrots 1 pc.
- Avocado 1 pc.
- Mango 1 pc.
- Red cabbage, fresh 0.25 pc.
- Shrimp easy peel 200 g
- Mint, fresh 10 g
- Cilantro, fresh 10 g
- Rice paper 8 pc.
Instructions
- 1. Peel the carrot and trim the ends. Cut the vegetable into thin strips.
- 2. Halve the avocado and remove the pit. Gently scoop the flesh out of the skin with a spoon. Slice the flesh.
- 3. Peel the mango and remove the pit. Cut the flesh into thin strips.
- 4. Wash the red cabbage and remove the hard core. Cut the cabbage into thin strips or use a grater.
- 5. Wash the shrimp and cut them in half lengthwise.
- 6. Wash the mint and coriander. Shake them dry and pick the leaves off the stems.
- 7. Fill a shallow bowl or baking dish with some water. Place a rice paper sheet in it and wet it evenly. Let it soak for about one minute.
- 8. Remove the soaked rice paper and let it drain briefly. Lay it flat on a cutting board.
- 9. Place the shrimp, carrot strips, avocado slices, red cabbage, and herbs in the center of the rice paper.
- 10. Fold the left and right sides of the rice paper towards the center.
- 11. Roll the roll tightly upwards from the bottom edge.
- 12. Repeat the process with the remaining rice paper until all ingredients are used up.
- 13. Serve the colorful summer rolls with shrimp immediately.
