🍽️ Colorful Vegetable Skewers

Ingredients
- Zucchini 1 pc.
- Mushrooms, white 250 g
- Pepper, red 1 pc.
- Pepper, yellow 2 pc.
- Onions, red 1 pc.
- Feta 200 g
- Lemons 1 pc.
- Parsley, fresh 20 g
- Olive oil 4 tbsp
- Salt pinch
- Pepper, black ground pinch
- Oil 2 tbsp
Instructions
- 1. Wash the zucchini thoroughly under running water.
- 2. Cut off the hard ends of the zucchini.
- 3. Quarter the zucchini lengthwise into strips.
- 4. Cut the zucchini strips into bite-sized pieces.
- 5. Wipe the mushrooms with a kitchen towel if necessary to clean them.
- 6. Halve the mushrooms.
- 7. Wash the bell peppers.
- 8. Cut open the bell peppers and remove the stem and seeds.
- 9. Chop the bell peppers roughly.
- 10. Halve the onions.
- 11. Peel the onions.
- 12. Quarter the onions.
- 13. Gently separate the onion layers.
- 14. Cut the feta into small cubes.
- 15. Wash the lemon.
- 16. Zest about one teaspoon of lemon peel.
- 17. Halve the lemon.
- 18. Squeeze the juice from the lemon.
- 19. Wash the parsley.
- 20. Shake the parsley dry.
- 21. Pluck the parsley leaves from the stems.
- 22. Chop the parsley leaves finely.
- 23. Put olive oil, lemon zest, lemon juice, parsley, salt, and pepper into a bowl.
- 24. Mix the marinade ingredients well.
- 25. Add the vegetables to the marinade and toss them to coat well.
- 26. Thread the marinated vegetables onto skewers as desired.
- 27. Thread the feta onto the skewers as well.
- 28. Put oil in a pan.
- 29. Heat the oil over high heat.
- 30. Fry the skewers all around for about six minutes.
