🍽️ Colorful Couscous Vegetable Pot with Passion Fruit Dip and Raisins

Ingredients
- Salt pinch
- Sugar pinch
- Oil 2 tbsp
- Raisins 50 g
- Parsley, fresh 15 g
- Spinach 300 g
- Carrots 2 pcs
- Passion fruit 2 pcs
- Yogurt, plain 150 g
- Honey 1 tsp
- Sugar snap peas 150 g
- Couscous 300 g
- Pepper, black ground pinch
Instructions
- 1. Bring about 2 liters of water with salt and a pinch of sugar to a boil in a pot.
- 2. Heat 1 tablespoon of oil in a pan over medium heat.
- 3. Caramelize the raisins in the hot pan for about 2 to 3 minutes.
- 4. Remove the raisins from the pan and place them on a plate.
- 5. Clean the pan for the next step.
- 6. Wash the parsley and shake it dry.
- 7. Pluck the parsley leaves from the stems and chop them finely.
- 8. Wash the spinach and spin it dry.
- 9. Chop the spinach coarsely.
- 10. Wash the carrots and peel them.
- 11. Remove the ends of the carrots.
- 12. Slice the carrots into thin rounds.
- 13. Halve the passion fruits.
- 14. Scoop the passion fruit pulp into a bowl with a teaspoon.
- 15. Mix the fruit pulp with yogurt, 1 teaspoon of honey, and a pinch of salt.
- 16. Cook the carrot slices in the boiling salted water for about 5 minutes.
- 17. Wash the snow peas.
- 18. Slice the snow peas into thin strips.
- 19. Cook the snow pea strips together with the carrots for the last few minutes.
- 20. Drain the vegetables.
- 21. Collect 350 milliliters of the cooking water in the process.
- 22. Bring the collected water back to a boil in the pot.
- 23. Add the couscous to the boiling water.
- 24. Set the pot aside.
- 25. Let the couscous swell covered for about 10 minutes.
- 26. Heat 1 tablespoon of oil in the pan over medium heat.
- 27. Drain the swollen couscous.
- 28. Fry the carrot slices and snow pea strips in the pan for about 2 minutes.
- 29. Add the couscous, parsley, and spinach to the pan.
- 30. Mix all ingredients well together.
- 31. Season the mixture generously with salt and pepper.
- 32. Plate the couscous vegetable mixture on plates.
- 33. Add a generous spoonful of passion fruit dip.
- 34. Sprinkle the caramelized raisins over it.
- 35. Serve the dish.
