  3. 3. Caramelize the raisins in the hot pan for about 2 to 3 minutes.
  4. 4. Remove the raisins from the pan and place them on a plate.
  5. 5. Clean the pan for the next step.
  6. 6. Wash the parsley and shake it dry.
  7. 7. Pluck the parsley leaves from the stems and chop them finely.
  8. 8. Wash the spinach and spin it dry.
  9. 9. Chop the spinach coarsely.
  10. 10. Wash the carrots and peel them.
  11. 11. Remove the ends of the carrots.
  12. 12. Slice the carrots into thin rounds.
  13. 13. Halve the passion fruits.
  14. 14. Scoop the passion fruit pulp into a bowl with a teaspoon.
  15. 15. Mix the fruit pulp with yogurt, 1 teaspoon of honey, and a pinch of salt.
  16. 16. Cook the carrot slices in the boiling salted water for about 5 minutes.

  18. 18. Slice the snow peas into thin strips.
  19. 19. Cook the snow pea strips together with the carrots for the last few minutes.

  21. 21. Collect 350 milliliters of the cooking water in the process.

  28. 28. Fry the carrot slices and snow pea strips in the pan for about 2 minutes.
  29. 29. Add the couscous, parsley, and spinach to the pan.
  30. 30. Mix all ingredients well together.
  31. 31. Season the mixture generously with salt and pepper.
  32. 32. Plate the couscous vegetable mixture on plates.
  33. 33. Add a generous spoonful of passion fruit dip.
  34. 34. Sprinkle the caramelized raisins over it.
