🥗 Colorful Caprese Salad with Herb Dressing and Pine Nuts

Ingredients
- vine tomatoes 700 g
- salad cucumbers 1 pc.
- onions, red 1 pc.
- mozzarella 250 g
- organic limes 1 pc.
- parsley, fresh 20 g
- basil, fresh 10 g
- olive oil 4 tbsp
- salt pinch
- pepper, black ground pinch
- sugar pinch
- pine nuts 25 g
Instructions
- 1. Wash the tomatoes thoroughly and remove the stem bases. Wash the cucumber as well, trim the ends and peel if desired. Slice both into thin slices. Peel the onion and cut into very thin rings.
- 2. Arrange the cut ingredients evenly on a large plate. Drain the mozzarella, slice it and place it on top. Wash the lime, halve it and squeeze out the juice. Wash the parsley and basil, pat dry, remove coarse stems and chop finely.
- 3. In a bowl, mix the herbs with oil, lime juice, salt and pepper and season with sugar. Drizzle the salad with this, garnish with pine nuts and serve. Enjoy your meal!
