🍽️ Colorful Sausage Skillet with Oven Fries and Mango-Pineapple Ketchup

Ingredients
- potatoes, mainly waxy 800 g
- oil 6 tbsp
- carrots 3 pcs
- parsnips 3 pcs
- onions, red 1 pc
- sugar 1 tbsp
- roast sausages 4 pcs
- mint, fresh 5 g
- parsley, fresh 10 g
- mango 1 pc
- pineapple pieces from the can 100 g
- tomato paste 4 tbsp
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Preheat the oven to 230 degrees Celsius with fan.
- 2. Wash the potatoes thoroughly.
- 3. Peel the potatoes.
- 4. Cut the potatoes into fry strips.
- 5. Place the fries in a bowl.
- 6. Add 2 tablespoons of oil to the fries.
- 7. Toss the fries to coat them with oil.
- 8. Spread the fries evenly on a baking sheet.
- 9. Place the baking sheet on the middle rack.
- 10. Bake the fries for about 20 minutes.
- 11. Turn the fries after 10 minutes.
- 12. Keep the empty bowl for later.
- 13. Wash the carrots.
- 14. Wash the parsnips.
- 15. Peel the carrots.
- 16. Peel the parsnips.
- 17. Slice the carrots.
- 18. Slice the parsnips.
- 19. Halve the onion.
- 20. Peel the onion.
- 21. Slice the onion into rings.
- 22. Add 2 tablespoons of oil to a pan.
- 23. Heat the oil on high heat.
- 24. Add the onion rings to the hot pan.
- 25. Fry the onions for about 1 minute on high heat.
- 26. Add the carrot slices to the pan.
- 27. Add the parsnip slices to the pan.
- 28. Add 1 tablespoon of sugar to the vegetables.
- 29. Cook the vegetables for about 5 minutes on medium heat.
- 30. Transfer the cooked vegetables into the reserved bowl.
- 31. Keep the uncleaned pan.
- 32. Slice the sausages diagonally.
- 33. Add 2 tablespoons of oil to the pan.
- 34. Heat the oil on medium heat.
- 35. Add the sausage slices to the pan.
- 36. Cook the sausages for about 6 minutes.
- 37. Turn the sausages occasionally.
- 38. Wash the mint.
- 39. Shake the mint dry.
- 40. Remove the coarse stems from the mint.
- 41. Wash the parsley.
- 42. Shake the parsley dry.
- 43. Finely chop the parsley.
- 44. Peel the mango.
- 45. Remove the flesh from the mango pit.
- 46. Place the mango flesh in a tall container.
- 47. Add the pineapple to the container.
- 48. Add the mint to the container.
- 49. Add the tomato paste to the container.
- 50. Blend the mixture until smooth.
- 51. Season the ketchup mixture with salt.
- 52. Season the ketchup mixture with pepper.
- 53. Add the vegetables to the sausages in the pan.
- 54. Add the chopped parsley to the sausages.
- 55. Heat everything while stirring for about 2 minutes.
- 56. Take the fries out of the oven.
- 57. Add ½ teaspoon of salt to the fries.
- 58. Mix the fries with the salt.
- 59. Plate the fries.
- 60. Place the sausage and vegetable mix next to the fries.
- 61. Serve the mango-pineapple ketchup on the side.
