🍰 Fluffy Yeast Dumplings with Plum Filling and Compote

Ingredients
- Milk 65 ml
- Yeast, fresh 12 g
- Sugar 30 g
- butter 15 g
- Wheat flour, Type 405 125 g
- Eggs 1 pcs
- Salt Pinch
- Plums 200 g
- Honey 30 g
- Plum puree 50 g
- Whipping cream 50 g
- Cinnamon 0.25 tsp
Instructions
- 1. Warm the milk in a pot over low heat until it is lukewarm.
- 2. Dissolve 10 grams of sugar and the crumbled yeast in the lukewarm milk.
- 3. Let the yeast milk mixture rest for about 10 minutes.
- 4. Melt 10 grams of butter in a pan and then let it cool down.
- 5. Combine the yeast milk, flour, 15 grams of sugar, the egg, salt, and the cooled butter to form a smooth dough.
- 6. Cover the dough and let it rise in a warm place for about 1 hour.
- 7. Wash the plums thoroughly, quarter them, and remove the stones.
- 8. Bring 50 milliliters of water and 15 grams of honey to a boil in a pot over medium heat.
- 9. Add the plum quarters to the pot and cook them for about 8 minutes until soft.
- 10. Let the plum compote cool down completely.
- 11. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 12. Knead the yeast dough again on a lightly floured work surface.
- 13. Divide the dough into 8 equal pieces and shape them into balls.
- 14. Flatten the dough balls slightly.
- 15. Place one heaped teaspoon of plum jam in the center of each dough piece.
- 16. Close the dough around the filling to form a ball again.
- 17. Grease a baking dish with the remaining butter.
- 18. Place the buns closely together in the prepared dish.
- 19. Let the buns rise covered for another 15 minutes.
- 20. Mix the cream with 2 teaspoons of sugar in a bowl.
- 21. Brush half of the buns with the cream-sugar mixture.
- 22. Bake the buns in the preheated oven for about 30 minutes.
- 23. Brush the buns with the remaining cream mixture halfway through the baking time.
- 24. Mix the remaining sugar with cinnamon.
- 25. Serve the buns warm or cold together with the plum compote.
