🍽️ Crispy Brunch Rösti with Smoked Salmon and Caviar

Ingredients
- mixed leaf salad 30 g
- dill, fresh 10 g
- olive oil 4 tbsp
- salt pinch
- pepper, black ground pinch
- potatoes, mainly firm 3 pcs
- carrots 2 pcs
- eggs 1 pcs
- cornstarch 1 tbsp
- crème fraîche 2 tbsp
- smoked salmon 50 g
- trout caviar 1 tbsp
Instructions
- 1. Wash the salad thoroughly.
- 2. Wash the dill and shake it dry.
- 3. Pluck off fine dill tips.
- 4. Place the salad and dill into a bowl.
- 5. Add one tablespoon of olive oil.
- 6. Season with salt and pepper.
- 7. Mix everything well together.
- 8. Wash the potatoes and carrots.
- 9. Grate the potatoes and carrots coarsely.
- 10. Keep the skin on while doing so.
- 11. Place the grated ingredients into a bowl.
- 12. Add one egg.
- 13. Add one tablespoon of cornstarch.
- 14. Season with salt and pepper.
- 15. Mix the mixture well.
- 16. Heat three tablespoons of oil in a frying pan.
- 17. Use high heat for this.
- 18. Distribute the rösti mixture evenly in the pan.
- 19. Press the mixture down slightly.
- 20. Fry the rösti for about four minutes.
- 21. Wait until the sides are slightly brown.
- 22. Turn the rösti over.
- 23. Fry it again for about four minutes.
- 24. Fry until golden brown.
- 25. Slide the rösti onto a plate.
- 26. Invert the pan over the rösti.
- 27. Turn the rösti and pan together.
- 28. Ensure the uncooked side lies back in the pan.
- 29. Place the finished rösti on a plate.
- 30. Garnish it as you like with the salad.
- 31. Add crème fraîche.
- 32. Place smoked salmon on top.
- 33. Add caviar on top.
- 34. Enjoy your meal!
- 35. You can also prepare the rösti in the oven.
- 36. Shape the mixture on a baking sheet into a rösti.
- 37. Preheat the oven to 180 degrees.
- 38. Use top and bottom heat.
- 39. Cook the rösti for about 20 minutes.
