🍳 Crispy Leek-Pear Breadsticks with Pecans

Ingredients
- Brown sugar 1 tsp
- Yeast, fresh 30 g
- Wheat flour, Type 405 400 g
- Whole wheat flour 300 g
- Salt 1 tsp
- Pecan nuts 50 g
- Leek 1 pc
- Pears 1 pc
- Butter 1 tbsp
Instructions
- 1. Mix 300 milliliters of lukewarm water with brown sugar in a bowl.
- 2. Crumble the yeast into the sugar water mixture and stir well.
- 3. Let the yeast mixture rest for about 10 minutes.
- 4. Put 300 grams of wheat flour, whole grain flour, and salt into a mixing container.
- 5. Pour the yeast mixture over the flours and knead the dough for two minutes on the kneading setting.
- 6. Take the dough out of the container and shape it into a ball.
- 7. Place the dough ball in a bowl and let it rise in a warm place for about one hour.
- 8. Roughly chop the pecans in the cleaned mixing container for five seconds on setting 5.
- 9. Remove the chopped nuts and set them aside.
- 10. Remove the root end of the leek and cut it lengthwise.
- 11. Slice the leek into thin rings and rinse them thoroughly in a sieve.
- 12. Wash the pear, peel it, quarter it, and remove the core.
- 13. Dice the pear roughly.
- 14. Pulverize the leek and pear cubes in the mixing container for eight seconds on setting 5.
- 15. Preheat the oven to 220 degrees Celsius for top and bottom heat while doing this.
- 16. Add butter and the chopped nuts to the vegetables in the mixing container.
- 17. Place the lid on without the measuring cup.
- 18. Sauté the mixture for five minutes on the sauté setting.
- 19. Push the vegetables down against the side of the container.
- 20. Sauté the mixture for another two minutes.
- 21. Remove the warm vegetable-nut mixture and let it cool in a separate bowl.
- 22. Place the risen dough on a floured work surface.
- 23. Divide the cooled leek-pear mixture into two or three portions.
- 24. Knead the vegetable portions into the dough one after the other.
- 25. Gradually work the remaining flour into the dough.
- 26. Shape the dough into two elongated loaves.
- 27. Place the loaves side by side on a baking sheet lined with baking paper.
- 28. Let the loaves rise covered for another 20 minutes.
- 29. Bake the breadsticks in the oven for about 25 minutes until golden brown and crispy.
- 30. Let the finished sticks cool on a wire rack.
